This is a work in progress, but so far with good results.
Flavour is ok (near perfect with cheesy tasting tapioca flour).
Texture needs a little work. Cooking behaviour is spot on (as long as you go slow).
Cheese sauce
In a saucepan add: *edit two, apparently I wrote down the cup size wrong*
1/4 cup tapioca flour (if you have slightly cheesy tasting tapioca it will produce better results)
1/2 tea spoon salt (more may be needed)
50g (one tub) of powdered onion granules (to me it tastes cheesy)
1/4 cuparrow root *edit oops!* amaranth flour (can be left out, pork scratching flour would work well!)
250ml water
Stir thoroughly.
Next add two whole eggs and stir again.
Allow to sit for 5 minutes.
Begin to heat the mixture and stir in 50g of melted (but not hot) butter.
Finally add:
1/2 tea spoon of lemon juice
1/2 tea spoon of choline bitrate powder (optional)
Stir.
Slowly heat the sauce until it reaches roughly 60oC (stir lots).
At this point it will start to thicken considerably. Keep stirring until you get a little steam but don't cook/burn it.
Grilled cheese chicken
Cook 1kg of chicken in a saucepan until done.
Remove from the pan and place in an oven proof dish, cover chicken with cheese sauce.
Bake for 10 minutes at 150oC to dry out the 'cheese' (or it will melt off the chicken before cooking).
Bake at 250oC for about 10 minutes until the cheese is browned! *edit* may be worth cooking at 180oC for 25 mins instead (10 minutes may not be fully cooked)

Total = 46g
