Because French ovens are somewhat smaller than American ones, we had a bit of a quandary as to how to get the roasting pan to fit inside. Thankfully, we had some disposable pans that we brought with us from the U.S. We were able to bend up the end in such a way that the pan was not damaged, and here you can see what remains of a very large quantity of fat and juices that had filled it up to the brim just before we removed the bird from the oven. We used a piece of aquarium air-hose to siphon the excess pan drippings out into a pot before attempting to move the bird. If you do this yourself, remember to use the soda bottle method of siphoning. put the end of the tube down into the bottle and suck on the bottle opening to start the siphon. This way you won't burn your mouth.
