Almond muffins with sour cherries / gluten-free

I don't know what it is, but for a few weeks now I've been craving sweets and a piece of cake with my coffee :halo:
So while searching for recipes, I came across this delicious muffin recipe. I can only recommend it...

Almond muffins with sour cherries / gluten-free

Ingredients:

140g ground almonds
120g buckwheat flour (or ground buckwheat)
60g almonds or hazelnuts chopped
3 tsp baking powder
Cinnamon (any)
1 jar of cherries (or fruit of your choice)
1 egg
160g brown sugar
100 g coconut oil
1 sachet vanilla sugar
250g natural yoghurt
Icing sugar for dusting / I sprinkled almond flakes on top before baking.

How to make it:

Preheat the oven to 170 °C (fan oven). Line the cups of a muffin tin with paper cups.

Drain the cherries. Mix the ground almonds, buckwheat flour, baking powder and chopped nuts. Optionally, mix in the cinnamon.

Mix the egg, sugar, coconut oil, vanilla, yoghurt in a separate bowl. Mix in the flour mixture and gently fold in the cherries.

Fill the muffin tins 3/4 full. Bake at 170 °C for 20 - 25 minutes. Dust with icing sugar if necessary.

The recipe is enough for 12 - 14 muffins.
