Awesome Snack - Coconut Oiled Cashews

Been having this problem finding healthy snacks to munch on throughout the day, and I've been eating a lot of 'roasted salted cashews' but when I read the label they were always roasted with some sort of vege oil and we all know that's not good... so recently I figured I'd just take some raw cashews, drizzle some coconut oil on em and then salt em myself.

The results pretty awesome and its tasty. Just took a pound of raw cashews, about 2 tables spoons of liquified coconut oil and a table spoon or so of sea salt and shook em up in a baggy. Presto! Healthy tasty snack!

When I get a craving like this it will not go away until I get me some.!.!.!
I sure could use a smiley icon for "NOM NOM NOM"...
 
Great recipe Puck: extremely simple and sounds very tasty, that's how I like them!

I bet this would work great with a mix of my favorite nuts: cashews, almonds and macadamian!
 
Funny you should mention this Puck, I was just recently snacking on those myself but read the same thing. Some kinda vegetable oil :( and I seem to be having a reaction when I was eating them as well. Within minutes of having a few cashews my skin would start itching me (mostly facial) and I thought maybe I'm just allergic to them but now I wonder if maybe if it was the oil they used. I'll have to give your recipe a try and see what happens. This will let me know for sure whether its the nuts or the oil and I'll only need a small amount to find out. Thanks.

Thanks RedFox, I had just read that section today. :lol: I know the vege oil is horrible stuff which is why I was depressed to find that my cashews were soaked in it but I can buy them raw at my local health place and just try doing what Puck has mentioned. I remain hopeful and will let ya know! ;)
 
I love cashews. Been eating the roasted and unsalted ones as a snack........ Just looked at the label and they are roasted with rice bran oil. Guess I'll just buy the raw ones and soak them in the coconut oil, add a little Himalayan salt. It really gets to be a pain in the rear to have to check ingredients lists for everything you buy. :(

I tried cashews for a while as a way to increase fat intake, and started to crave them (which had been a problem before). I stopped eating them again and felt better. Now I realize it may have been the starch. 2/3 of the considerable carbs in cashews is starch. I tried looking up the figure for cashew butter and found "not available." Just be aware...
