Buckwheat banana cake

Yesterday, I baked my first cake. Really tasty gluten/dairy/sugar free. And with no eggs to that! I took the recipe from polish vegetarian/vegan site - http://puszka.pl/przepis/2447-razowiec_na_bananach_czyli_bananowe_ciasto_z_maki_razowej.html, which has its origin in this recipe - http://www.pcrm.org/health/Recipes/recipe000103.html and modified it a little. Instead of whole wheat flour I used buckwheat flour. I was a little worried about the outcome, but it turned out great!

These are the ingredients:

4 very ripe bananas
2 cups buckwheat flour
1,5 teaspoon baking soda
0,5 teaspoon salt
1/3 cup oil (I used grapeseed) + a little to grease baking pan
1/4 cup water
1 cup shredded walnuts
1/2 - 3/4 cup raisins
vanilla aroma if desired

Blend bananas with blender or fork. Next add raisins (soaked in hot water for a couple of minutes before that) and blend/mix it a little bit. Then add rest of ingredients and mix everything with a spoon.

Spread in lightly oil-sprayed square baking pan. Bake for 30 to 35* minutes, or until a toothpick inserted into the center comes out clean.

About the temperature of oven: I don't have a thermostat, so I was going with medium heat. Polish recipe recommend baking in 180 C. Original in 350 degrees F (175 degrees C).

* 45 to 50 in both recipes with whole wheat flour, but buckwheat is quicker :)


The cake is a little moist, naturally sweet and yummy. And it's healthy!

At the time I'm experimenting also a lot with buckwheat-muffin cakes and bananas and cacao. Stevia is not the best sweetener imo to get over the bitterness of the cacao, so I'm using bananas to give further flavor and sweetness.

What about dates to help with the sweetness factor? They really work good with cacao powder. I use them instead of any other sweetener sometimes.

Thanks for that tip. Unfortunately dates are pretty expensive, nonetheless I will check the supermarkets if they have any and give it a try. :)
Or xylotol, would be then an alternative also.

What basic recipe are you using for the muffins? I'm still experimenting too, less than successfully! :)

What basic recipe are you using for the muffins? I'm still experimenting too, less than successfully! :)

I'm using this blini receipt:

12 Glasses/cups of water
3 big spoons of salt
1,5 glasses/cups of grapeseed oil
6 scoops of d-ribose (but this I don't have myself)
3 big spoons of baking powder
2 kg buckwheat flour

and for the -muffins- batter lots of cocoa, extra baking powder and xylotol (which I also don't have). And I'm not using 2kg so then I'm adjusting the rest of the ingredients according to the buckwheat flour I have.


I think there is a different receipt to be found on the forum too.

But the receipt is getting better every time. :)
 
This recipe is a keeper!!

It was quick to make and turned out much better than some of my other adventures with buckwheat.

I used dates instead of raisins and a teaspoon of xylitol.

Buckwheat muffins with cacao and bananas? Yum!
I don't know about stevia, though. I use xylitol. For example, yesterday I had hot cacao (rice milk + cacao powder) sweetened with one teaspoon xylitol and it was very sweet. In fact, half a spoon would be enough.

But as Nienna Eluch have said, dates would be good alternative, too.

I'm thinking about adding dates next time (that is, if I find them anywhere). Or apple mousse with dried apricots instead of bananas and raisins :D

IMO rice-milk is not recommend cause it has some gluten in it :(, maybe try coconut oil as an alternative.

The bad news first: it seems that, in addition to lectins, rice has gluten.

The good news: now we can all save money by not eating rice or drinking rice milk!

I have made a similar cake a few times. Only I have used a bit of cinnamon and cardamum to dampen the taste of buckwheat (we still haven't gotten used to the flavour). :-[
 
Thank you for the info, Gandalf. Though, now in winter, pumpkin milk is kind of out of question (I don't want to use non-fresh seeds). And hemp is non available in my area. But it's not like I'm that big fan of milk. I can manage well without it :)
