Buckwheat Loaf - just buckwheat

Buckwheat Loaf
Suitable to slice and pack for lunches.


Ingredients:
2 cups buckwheat seeds (groats/raw - 400ml)
2 cups buckwheat flour (400ml)
5 cups filtered water (1 litre)
2 teaspoons baking soda (sodium bi-carbonate)
1 teaspoon natural sea salt
1 Tablespoon hemp protein powder
1 Tablespoon virgin olive oil
2 teaspoons raw sugar/sweetner

First:
Boil and then simmer buckwheat seeds with half teaspoon salt or to taste in 3 cups water until seeds are soft and fluffy. Do not overcook. Add more water if required. After cooking drain/strain excess water off.

While the groats are cooking:
Mix 2 cups water with baking soda, salt and oil.
Add buckwheat flour, hemp protein powder and sugar/sweetner.
Add cooked and drained seeds and mix well.

Pour into a well buttered loaf tin and cook at 180 degrees for one to and one half hours.
Turn out onto board and wrap in clean tea towel as it cools.

Sweet:
Add fruit, dried or fresh to the loaf remembering not to make the loaf too moist. And/or serve under mashed banana. Dates or blueberries and banana are a nice combo.

Savory;
Add meats, fish, veges perhaps spices and so on.
You can remove sweetner from the original mix.
You can batter the mix and make small patties to fry. Ball the mix and roll in buckwheat flour and fry in oil or clarified butter.

I made this the loaf pictured in a 235x130x70mm tin and it rose 20mm in the cook. This loaf has dates and chopped up apple. It was delicious and slices well. I have tried to attach the image of it but it has not shown in this preview. I'll post it anyway and see.

Hey ignite, thanks! My bread machine has lain fallow since I cut the gluten.
But this looks candidate for makin' some sandwiches!
 
Looks nice, thank you for the recipe. I've been just using the pancake recipe and putting it in a loaf dish. I've thought about putting groats in it too like this recipe has to get it more clumpy.
 
I'll certainly be trying it out. I've tried to make a 'just buckwheat' loaf a couple of times, and both times it came out really badly. Smelled and tasted like a mixture of burnt plastic and ammonia.

What's the hemp protein for?

Absolutely! What an honor. Ta.

I was led to it because I just cannot get the pancakes to work!

I put it in a plastic bag in the fridge after it cools and it keeps a few days like that.

The amonia taste and smell does not sound good - my mind asks "what kind of kitchen-ware are you cooking it in?"

The hemp protein is ground hemp seed which is very high in protein and has lots of other vitals in a natural form. It is used in the Ultra Simple Diet and adds a nice bit of extra body in the loaf. Feel free to leave it out, I'm sure the loaf will be just as nice. :cool:

Is that 180 degrees F or C?
