Goemon's recipee
330 gr Cocoa powder,
1/2 cup bacon grease,
1/2 cup coconut oil,
4/5 slices of cooked bacon,
40 gr xylitol

5 oz dairy free 85% or higher dark chocolate
1/2 cup leftover bacon grease, melted (I strain my bacon grease through cheesecloth before storing)
1/2 cup coconut oil, melted
4 strips cooked pastured bacon, cut into small pieces
Sweetener to taste
Instructions
- Start to melt the chocolate in a sauce pan over low heat.
- Add the bacon grease and coconut oil. Stir to combine.
- Add the sweetener, to taste.
- Line a mini muffin tin with 24 liners.
- Evenly distribute the bacon pieces among the 24 muffin cups.
- Fill each liner with the chocolate mixture.
- Refrigerate for 20-30 minutes or until set.

Ingredients
2 pieces thick uncured bacon (or 3 pieces of regular uncured bacon)
1.25 cups nut meal/flour (your choice here…almond, hazelnut, walnut–or a mix of what you have in your pantry!)
3 tablespoons ghee or organic unsalted butter, melted
1/4 cup raw honey
1/2 cup chopped dried cherries (no added sweeteners)
3.5 oz 70% dark chocolate bar, chopped into small chunks
1 teaspoon orange zest
1/4 cup unsweetened coconut flakes
2 tablespoons unsalted sunflower seeds
Directions
- Cook bacon until crisp. Once cooled, crumble.
- Preheat oven to 350 degrees. Mix all ingredients, including the crumbled bacon. Make sure this is well-blended because otherwise you will have pockets of honey.
- Line a baking sheet with parchment paper. Place about a tablespoon of cookie mix in a ball on the baking sheet. Press down each ball. Leave about an inch between cookies as these will spread when they cook.
- Cook for 10 minutes. Let cool for about 10 minutes before transferring to a cooling rack. After the transfer, cool for about another 1/2 hour so that they can stiffen.
Mine :
Two or three organic orange zest
125 g or 200 gr of hazelnut powder
50 gr coconut powder
2 chocolate bars (80%-90%) in pieces
Ten thin slices of bacon
2 eggs
50 or 80 gr butter
50 gr coconut oil
Some xylitol if needed
- Cook the bacon in a pan (you can also cook it in oven),
- Mix all other ingredients in a bowl
- Then add the bacon, chopped, with the mixture in the bowl
- Place evenly on a baking sheet
- Cook approx. 20 minutes in oven
- Refrigerate a few hours.
