Egg-Free Coconut Macaroons

Not sure some body posted this before, Today I tried this, came pretty good. Egg free, It still have some buckwheat in it. Since I am skinny, took the liberty of using buckwheat. Also I eat 3or 4 buckwheat blini's with fat once in a while .

recipe is simple and straight forward. organic coconut powder, organic coconut milk, xylitol, salt, 2 TBSP organic buckwheat, organic cocoa powder . The only thing different is it take more than 35 min. baking instead of 16 minute mentioned in the recipe. Since it is buck wheat , it is understandable.
 
This looks delicious. I'm always eager to try something new. I think I'll have to modify the recipe a bit, leave out the buckwheat. I think almond meal would probably work fine. It works as the flour for macarons.

Egg works as a binder, as does buckwheat flour.

Appropriate egg substitutes are: 1tbsp ground flaxseed soaked in 3tbsp boiling water, mixed, and allowed to cool; or 1heaped tsp baking powder and 1tbsp oil (grapeseed oil is a great binder for biscuits and muffins).

Rather than using coconut powder and coconut milk, you may like to use creamed coconut instead with one of the above egg substitutes, and play around with quantities until you get the required macaroon texture - rather than using buckwheat.

They were delicious but dangerously carb'ed. Just a caveat to everyone on the meat-only wagon that are tempted. Coconut macaroons used to be a favorite treat so I just had to try these but in the back of my mind knew this was going to be a brute transition- making a tray of these and not being able to spare or share. Maybe if I could have eaten one a day or shared them this would have been a good choice to do. No finger pointing intended Seek 10, they were very tasty and I learnt a lesson, tested the keto threshold.

Edit: forgot to mention that they were consumed after a very fatty dinner, so sheer stupidity on my part.

Based on Labels The main carb component is Xylitol. when I used the xylitol mentioned in the recipe, I felt it needs little more xylitol. Yes, one needs to be cautious with carbs. Very tempting for sure. ;D

Thank you Trevrizent for the alternative to the buckwheat and egg whites. you looks like read my mind. I tried with egg white, it didn't came that sticky and also I also want to avoid egg white.
