Here is a slow cooker recipe I found that I really enjoy. I am not a fish lover but the taste of this stew is very comforting!
1.5 pounds of cod fillets, cubed (can use flounder, perch, pike, trout, or haddock)
2 sweet potatoes cubed
8 ounce vegetable broth
16 ounces mashed tomatoes
8 ounce of clam juice
1/2 cup each of chopped celery, onion, and carrots
3 cloves garlic
1/4 cup chopped fresh parsley
1/2 teaspoon dried rosemary
1 teaspoon salt
Cook in slow cooker 7 to 8 hours on low or 3 to 4 hours on high.
One hour prior to serving, mix 4 tablespoons buckwheat flour and 4 tablespoons ghee (or melted butter) in a small bowl.
Stir into the slow cooker until fish mixture is thickened.
