Paleo Ice Cream

My wife got a Cuisinart ice cream maker on Freecycle, so I've been experimenting with recipes using coconut milk. Here's one I like. It uses Stevia for a sweetener and has 15 g of carbs per pint. If you don't tolerate stevia xylitol would work.

In a mixing bowl add:

1 can coconut milk (14 oz)
2 tablespoons ghee
2 tablespoons vanilla extract
2 half droppers liquid stevia
1/2 teaspoon salt

Beat well and add to ice cream maker.
 
My sister and I have been making similar ice cream for awhile. I don't do exact measurements myself, but I heat pumpkin seed milk to almost a boil, remove it from heat and add anywhere from 3-6 egg yolks for a custard while the milk is still warm. You want to make sure you mix constantly at this point or you get pieces of yolk in the ice cream. Then throw in a dash of salt and add xylitol to taste. After it chills throw it in the ice cream maker. We add organic peanut butter and some home made chocolate chucks. I haven't tried using ghee, but unflavored gelatin works great as a thickener.

One thing I want to try out is using avocados as well as coconut milk. I've seen a few recipes using it; maybe throwing in some eggs, stevia, and vanilla; and it'll be pretty nourishing, as well as tasty.

While the peanut butter sounds tasty (peanut butter cup ice cream was my favorite when I ate whatever it liked), it's inflammatory, high in omega 6s, a common allergen, and a legume. I'd recommend cutting it, personally. and it's been quite some time since I've eaten peanut butter myself.
