The Force is Strong With This One
I recently bought some quinoa to take the place of rice and other things. I was afraid it would be unpalatable to me, but it turned out well, especially since this recipe is so strong it disguises its green flavour. Salad Ingredients:
.5 cup dry quinoa, cook it
3 bunches green onions, finely chopped
6 sprigs chopped Italian parsley leaves
3 sprig roughly chopped fresh mint leaves
1 half of a persian cucumber
1/4 a red onion
Dressing Ingredients:
1 lemon's worth of juice
1 large cloves garlic, minced
Salt and pepper to taste
Add in or leave out whatever. If I make it again, I would leave out the cucumber and/or red onion. Replace it with broccoli and white onion or something. As is, though, it reminds me of Tzatziki sauce.
