The Force is Strong With This One
Checked to see if anyone posted something similar, but it doesn't seem like it.
I found this in a cookbook of traditional recipes called Nourishing Traditions by Sally Fallon - it's an awesome book with recipes from around the world, and articles in the margins with evidence of why such recipes are much more healthy than the carb/veggie diet that modern nutritionists endorse. I was a little skeptical of trying out raw meat... I like sushi but I'd never tried raw beef. I was also wary of parasites, but the book explains that all you have to do is freeze the meat for at least 14 days. And obviously, be careful of the type of meat you buy - how it was raised and what it was fed, etc. I use beef raised organically by my family, so it's pretty safe stuff.
Steak Tartare - (or, as my fiance calls it, "Tiger Meat" :P )
1 pound ground sirloin or filet, frozen 14 days and thawed
1 medium onion, finely minced
1/4 cup parsley, finely chopped
3 tablespoons Dijon-type mustard
2 egg yolks
sea salt, pepper and cayenne pepper (to taste)
2 hard boiled eggs, finely chopped
1 cup small capers, drained, rinsed and dried with paper towels (I've never actually tried it with these in)
We usually eat it with crackers, as a snack. It's pretty filling stuff. I've also put various kinds of herbs in it.
