Years ago I learned a recipe form Jamie Oliver: Baked potatoes with lemon, rosemary garlic and onion.
Instead of potato we tried with pork roast, I used the picnic part.
Ingredients:
3 pound of pork picnic,
bunch of fresh rosemary,
1 lemon,
1 head of garlic,
1 big onion,
salt,
pepper,
lard.
I paint a glass pan gently with lard, of course you can use ceramic or dutch oven or whatever you have at home.
I slice the onions half circles, put them with 4-5 garlic cloves on the bottom of the pan, 3-4 lemon slices, rosemary, salt pepper, and put the piece of picnic on it, also salt pepper.
And then I put more garlic into the meat and on the top.
Salt, pepper, rosemary and lemon again on the top of the meat.
Cover it with aluminum foil and place it in the oven, 325 F =162.8 - 163°C for approx. 2 hours.
After 2 hrs, I take the cover off and broil it for 10-15 min. until nice and golden brown.
