Hello everyone, I wanted to post some traditional Peruvian recipes! This are my variations, so this are not the original 100% recipes, I had to change them to make them, gluten and dairy free. So I hope you really enjoy them and invite them to your friends and family!! :)
Fish Ceviche
You can use flounder, parrot fish,warehou fish, corvina, or really any fish you have, but the thing is that it has to be really fresh, like that day fished.
OK so you'll need, a fresh fish. 300 grams
-Lemon juice, please use the really acid lemons, the yellow ones that are sweet will absolutely will not work. 10 units or half a cup
-Yellow pepper (this is optional) it can be a little on your stomach 1
-Two Ice cubes
-Salt and pepper
-Julienned red onion (this is also optional) You can use any kind of onion 1
So, lets star by cutting the fish into cubes, not to little and not to big, smaller that a chicken nugget though. Then squeeze the lemons and mix the fish with the juice, gently stir the ingredients, add the salt and pepper and the two ice cubes. Let it rest for 5 minutes, then add the onions and the pepper, let it rest for 5 more minutes, and your ceviche is ready to be eaten! You have to eat it in the moment or it will over cooked and it will not be the same, this is definitely a summer dish.
"Lomo saltado"
This is one of my favourite Peruvian dishes, and its really easy to make! You'll need:
-Cow steak: 300 grams
-Potatoes (optional): 1 large ones
-Onions : 1 Small one
-Tomatoes : 1
-Parsley: mmm a tea spoon full of chopped parsley
-Wild rice: 1 cup
-A wok
OK, first you'll need to cut the steak into slices and also the tomatoes and onions, make sure to remove the tomatoes seeds. Heat really up your wok with some oil in it, and put the meat, flip your wok and after 2 minutes remove the meat, then ad the onions, cook them for 3 minutes, then ad the tomatoes cook for 2 more minutes and then put back the meat accompanied with the chopped parsley, salt and pepper as you like and continue to cook the mix for 3 to 4 more minutes, basically until the meat is done. Always keep your wok in the move, flip it as many times as you can so that the preparation is well mixed.
Serve with french fries and wild rice!
