Hi,
this refreshment is easy to prepare, enjoy it even if we are out of summer

Avocado, Coconut Milk & Lime Ice Cream

Ingredients

1 can full fat coconut milk (refrigerated)
2 avocados (previously peeled and pitted, then cubed and frozen)
1⁄2 cup lime juice (from about 5 limes)
1 tablespoon lime zest
1 tablespoon vanilla extract
10 drops liquid stevia (more to taste, up to 20 drops)
1⁄4 cup water
Instructions

Place all ingredients into a blender or food processor and blend until smooth. Scrape down the sides a few times to get a smooth texture.

Keep in freezer until ready to serve. Best to serve same day as made.

Thank you for the recipe. I think my kids would enjoy this. My husband made a paleo key lime pie that used avocado and surprisingly it tasted like the real thing.
 
That sounds delicious, Shared Joy. Have you tried it yourself yet? If so, what is the taste like? Do you have any pictures you could share?

just some observation:
- be sure the avocados are well ripen
- the coconut could be too watery, depending on the brand, so don't shake it before use, first open, then drain some of the liquid

I don't think it would make a difference, but increase the amount slowly, stirring continuously, to avoid overdosing.
