A 2 or 3 second delay at 120 knots speed combined with a changed altitude parameter during night time especially if the plane does not have the landing gear out and landing lights on CAN be done remotely and does not leave traces. I don't think ALL radar information is digitally cached or recorded 24 out of 24. Also I don't think radar installation access points keep track of all 'maintenance / access logs'.
