I've been meaning to post this recipe for a long time, but didn't have the chance. I made some today and took the chance to make this post. So here goes.
Ingredients:
Grass-fed butter
Greek (black) olives (kalamata, Royal Greek, or alfonso are best)
Extra virgin olive oil
Vinegar
Fresh garlic
I used to de-pit the olives and mash it either by hand or in a food processor. But now I buy olive paste in a jar. Basically, you want about 200 grams of mashed olives, about a teaspoon of olive oil, and 2/3 teaspoon of vinegar. Add 200 to 225 grams of soften butter. Mash 2 large cloves of garlic. Mix well all together. Enjoy. Very delicious and also makes a good spread.
