The following recipe is a southern one. I got it out of the "Cotton Country collection", which is a collection of Louisiana recipes.

Chicken Spectacular is basically a meal in one and tastes great warm or cold. I love to eat it about a day later after all the spices and ingredients have mingled all their respective flavors.

I will list the recipe verbatim, but some you will have to improvise since it calls out quite specific brands.

Added: I do add spices over and above what is listed in the recipe..

Ingredients:

3 cups of cooked chicken
1 package Uncle Ben's Combination Wild and White Rice, cooked
1 can of cream celery soup
1 medium jar of sliced piementos
1 medium onion, chopped
2 cups French style green beans, drained
1 cup Hellman's mayonnaise
1 can water chestnuts, diced
salt and pepper, to taste

Instructions:

Mix all the ingredients. Pour into a 2 1/2 or 3 quart casserole. Bake 25 to 30 minutes at 350 degrees [Fahrenheit].
Serves 16. To freeze do not cook prior to freezing.
 
I think it is only supposed to serve 6, and as a side dish.
