Many of our EE students are interested in the detox diet. So, we decided to organize cooking lessons. Yesterday was our fist one. And it went great!!!
We had 9 students, plus 3 who showed up later.
We made blinis, breaded chicken, quinoa taboule, muffins and chocolate muffins. They loved it!
In the beginning we talked for about an hour or so about the basics of the diet: Gluten-free, dairy-free and why, candida, good vs bad sugars, good vs. bad oils. All sitting around the table and drinking iced tea sweetened with Stevia, xylitol and d-ribose.
It was really a beautiful experience. Everybody chatted and shared things, we all laughed and cooked together, and they were happy to see that the "diet" is not a diet but rather a cool living style. We think they are convinced now! And we hope they'll keep it up. They were already saying they would do some creative variations, like the muffins with ham and olives to take to work, etc.

Everybody was very active asking questions about different ingredients, where to get supplies, etc. Some even shared something about their own physical condition. And a few of them, who are already gluten and dairy-free, explained all the benefits they've had.
Three women had come because, although they don't do the EE program, we have worked with them in trying to help their grandchildren who have a very serious and rare disease. They have already noticed the benefits of removing gluten and dairy from the kids' diet and are eager to learn more recipes so that they can cook for them. It is a very sad situation, but they are doing their best to save them or at least help them have a better life. Without gluten, their digestive problems have really decreased! The children's aunt was telling us about their condition here. It was a good opportunity for them to share their suffering and for others to learn about the disease.

A nice meal, everybody happy, and sharing a friendly meal as it should always be in a healthy society. :D
