Hello friends.
I hope this isn't a double thread, if so, please excuse me and feel free to merge this with the existing one.

Now, I suffer from gluten allergies and they can get pretty severe at times. I constantly read different articles on the matter, but it is kinda different (and better) to hear/read experiences from real people and not just self-proclaimed professionals.
A few months ago, I tried the paleo diet and I managed to lose a few pounds. However, a friend of mine, who also started the diet with me, had amazing results with half the effort. Could it be that I am having other food/ingredient intolerance? Any experiences with this? I've read about hidden diabetes and insulin resistance, but as I am out of state, I can't do my checkup right now or in the near future.
Any symptoms that I should be looking for?

My question to you would be are you still drinking municipal water? I'm aware that the chemicals in the water are being detrimental to your health. I was paleo/gluten-free and am resuming it as soon as this Reverse Osmosis filter comes in, which should be in two days. Neem powder is also helpful in strengthening the body too.

From the information you have given it is difficult to say without knowing what other foods you are consuming in your diet. Can you elaborate?

From my own experience, I found that there were many food intolerances that were hidden and that I was not aware of until I eliminated certain foods from my diet and then re-introduced them and discovered that they were causing reactions. I know this is also the case with many people here on the forum.

There is also something called cross-reactivity. Basically, when the body produces antibodies against gluten, those antibodies can also recognize similar proteins in other types of non-gluten-containing foods(through a process called molecular mimicry), and therefore initiate the an immune response as if you were eating gluten. So things like coffee, cocoa, buckwheat, rice etc can all cause the similar reactions if there is cross-reactivity, which there very likely is. What sort of symptoms are you experiencing?

First of all, I would recommend that you read Primal Body, Primal Mind by Nora Gedgaudas to begin with. There are also the Life Without Bread thread that contains an abundance of information about gluten and diet in general.

You can also go to the Diet and Health section of the Recommended reading list for a list of books on nutrition that might interest you :)

Well i tried many, many different gluten free diets the fact is that all diets seem to be very strict and it happens to me to brake the rules because gluten free food becomes boring and tasteless very quickly. I am wondering if there are some other recipes including ( junk food of course gluten free) that avoid soy usage?

Well unfortunately i have to i tried to drink mineral water but it is also not that good in here and it is chemically distributed. Maybe i should try your solution
 
Read the "Life Without Bread" thread first. It would be counterproductive for forum members to try to reproduce that effort.
