Luxury Chocolate Almond Cake

Ingredients:
Cake:
300g melted butter
1tbsp Xylitol
6 eggs (separated)
300g ground almond
1tsp Arrowroot
300g chocolate
1/2 cup plus 2tbsp plus 1 tsp water/prune juice

Topping:
500g chocolate
2tbsp water
126g Clotted cream (or a mix of coconut cream/milk)

Method:
Cake:
Cream the melted butter with the Xylitol until it is fluffy and light.
In a separate bowl, beat the egg yolks well, add the ground almond and arrowroot.
In a bain marie melt the chocolate with a tsp of water, and then fold it into the previous ‘cake’ mix.
Whisk the egg whites into soft peaks.
Using a clean metal spoon fold the whisked egg whites into the chocolate almond cake mix, gently, retaining as much air in the mix as possible. (NB, make sure that the cake mix is ‘on the fluid side’)

Preheat the oven to 170C/325F/Gas Mark 3.

Butter a 20cm diameter, loose bottom cake tin, and pour in the cake mix.

Place the cake mix in the pre-heated oven and bake for 20 to 40 minutes, or until a skewer comes out clean.

Remove from oven, remove from the tin, and cool completely on a wire rack.

Topping:
Melt chocolate with water in a bain marie
Scold cream in a saucepan (bring to point of boiling and instantly remove from heat), pour immediately into the melted chocolate and beat with a whisk until it is thoroughly mixed, smooth and glossy.
Spread over cake and allow it to cool completely.

Enjoy.
