Off-putting marrow

Hi!

I ordered from my butcher some marrow bones few days ago. I wasn't really looking, as they were allegedly fresh and all previous ones were just fine, but these were not. Marrowbone was very unhealthy looking, although the bones actually smelled fresh, so i throw them away. Seems to me pretty lacking of fat with unusual liquid structure. Here are photos:

Those bones look gorgeous! You said they smelled fresh. Were the other bones you bought more chilled or frozen? The marrow would be more firm then. It might also have to do with how that particular animal had been fed. Have you brought this up with your butcher? It would be interesting to know what he says.
 
to me it looks perfectly fine, perhaps you are used to the appearance of marrow bones on frozen bones, this is how bone marrow should look on defrosted or non frozen bones.

They often look like this,

and are never frozen. This butcher cuts the bones in front of me.
I just bought some organ meat, but haven't mentioned him anything. :)

Also, my mother, chef by profession, have told me how they never keep their bones frozen, and how marrow still looks firm, like on this photo. She actually told me those weren't alright.
Dunno.

It probably has to do with how that particular beef was fed.
