Rosewater cookies

My mom found out a few years ago that she has celiac's disease (she is gluten-intolerant plus some other stuff). Unfortunately, she is a picky eater- NOT the best thing for someone who can't eat wheat, oats, etc. After trying to get her to eat foods from India, Japan, and elsewhere, I finally made these cookies and she loves them! Not the most nutritious meal, but it's a start.

Dough:
2 cups rice flour (have extra on hand)
1 cup ground almonds
4 egg yolks
1 tsp ground cardamom
1 cup melted butter

Syrup:
1 1/2 cups sugar
1/2 cup water
1/4 cup rosewater (or substitute more for some of the water if you want a stronger taste)
1/2 tsp lime juice

Combine sugar and water in pot and bring to boil- simmer for 2 minutes. Remove from heat; add rosewater and lime juice. Let cool to room temperature.
Beat egg yolks into syrup.
Combine butter, cardamom, rice flour, and ground almonds. Mix, then add syrup mixture and mix until no longer sticky (it should look sort of like play-dough- you likely will need to add some additional flour).
Roll dough into small balls and flatten slightly. You could garnish these with a few chopped almonds if you like. Place on cookie sheet and bake at 350 for about 15 minutes.
 
Sounds wonderful for another person who can't eat wheat. Any more non-gluten recipes?
