Totally Grain-Free, Sugar-Free Chocolate Cookies

Came up with this today after seeing an ad online for "Paleo bread" which is made from coconut flour and eggs. I figured I'd try it out with cocoa, and boy-howdy, these are good.

1.5 cups powdered coconut flakes (I powdered mine in the blender)
4 tablespoons cocoa powder (preferably organic - don't use hershey's!)
1/2 tsp. sea salt
1/4 tsp. xanthan gum
1/8 tsp powdered cloves
1/8 tsp cinnamon
1/3 tsp. stevia powder (or 1 packet) - or xylitol, or nothing - the coconut itself is fairly sweet.
2 eggs (or 3 egg whites if you're not eating yolks)
1/2 tsp. vanilla
1/2 tsp. lemon juice
1/2 c. butter, soft (also ghee, lard, or even coconut oil itself would work)

Whip the eggs, butter, lemon juice, and vanilla together. In a separate bowl combine all the dry ingredients and mix. Then mix the dry into the wet bowl slowly, adding water for consistency. Bake at 325 F for 20 minutes, and then enjoy the grain-free chocolate goodness. :)
