Here's a couple recipes I've come up with recently, thought I'd share. :)
Venison Jerky (Can work with other meats as well)
Ingredients:
3 lbs. venison (or other meat, beef preferably), cut into 1/4-1/2 inch thick strips, 3-6 inches long.
2 tsp. minced onion
1/2 tsp. white pepper
1/2 tsp. powdered garlic
2 tsp. salt
1 tsp. black pepper
1 tsp. dried cilantro
pinch of clove
pinch of cinnamon
pinch of ginger
Equipment: Dehydrator, sharp knife, mortar and pestle
Method: Cut the strips of meat and spread them out on the counter (on parchment paper or cutting board). Mix the spices together in a mortar. Sprinkle the spices over the strips of meat and mash it in with your fingers. Wash your hands before doing this! Dehydrating doesn't really 'cook' the meat, so be as sterile as possible. Lay the strips out onto the dehydrator racks and run for 8-10 hrs., and voila!
Beef Bacon Stroganov
Ingredients:
1/2 lb. butter or ghee
1 lb. bacon
3 lbs. sirloin or other tender cut of beef
1 cup chopped green onion or shallots
2 tsp. salt
1 tsp. pepper
1/4 tsp. nutmeg
1 tsp. dried tarragon
1.5 c. coconut milk
1 tsp. mustard powder
4 garlic cloves
1/2 tsp. rosemary leaves
1/4 tsp. thyme
Equipment: Some bowls, mortar & pestle, sharp knife, cast iron or other pan, boiling pot
Method: Cut the beef and bacon into small chunks, set aside. Cut the onion/shallots and garlic into small chunks, set aside. Mix all the spices in the mortar. Set your boiling pot going on low heat and put in the coconut milk and butter. Once they've mixed together, whisk and add in the spices. Cook on low for a few minutes until hot (not boiling) and set aside. Cook the beef and bacon together in a pan and set aside once done. Cook the onions/shallots and garlic and mix with the meat. Pour the sauce mixture on top of the meat to make the Stroganov. As a base, use whatever you like - rice noodles (if you tolerate them) or sweet or regular mashed potatoes, and put the mixture on top. (Or, as a carb-less alternative, just eat the Stroganov mixture by itself.) The coconut milk and butter come dangerously close to the taste of cooked cream...
