Apple cookies (approx. 22 pieces)
Ingredients
- 200 g soft butter
- 60 g sugar
- 1 packet vanilla sugar
- 2 eggs
- 250 g glutenfree flour
- 2 tsp. baking powder
- 1/2 tsp cinnamon (I am sure I had more cinnamon

- 2 apples, peeled, cored, in very small pieces (mix with a little lemon juice so they don't turn brown)
- icing sugar OR icing sugar and lemon juice, for decorating
PREPARATION
Preheat oven to 200°C convection oven.
Put butter, sugar, vanilla sugar and eggs in mixing bowl and mix until creamy
Add flour, baking powder and cinnamon and mix it in until you have a smooth dough.
Add apples and mix in with a spatula.
Drop dough by tablespoonfuls onto a baking sheet lined with parchment paper. Bake apple cookies for about 10 minutes.
After cooling, dust with powdered sugar as desired or make a glaze from powdered sugar and lemon juice and brush the cookies with it.
