Braised Chicken

Since Tuesday I have been craving to make a dish I had once or twice and will try tonight.
Farm raised chicken, brazed in deep pot with bit of cold pressed olive oil. Lower the flame and put at least 5 or 6 large chopped vandalia onions to release their juice, adding a bit more olive oil. Scoop the chicken from the bottom so it is laying on top the onions. Let the onions cook for awhile. You can add a bit of chopped garlic at this point, very little ginger, a pinch of Garam Masala, salt, pepper to your taste. After the onions cook well add dried apricots and squeeze half lemon on top of everything, then gently stir it up. If needed, add a a bit of chicken broth. Put the lid on and place it in the oven at 350F until the chicken is done.
Serve on top of wild rice. I am going to use coconut milk to make the rice with. Its so nutty, I love it.
 
I did it! Its not as good as I had in Morocco but is delicious!
Not to brag but it feels good to accomplish something even this small.
