Cooking Videos!!!

Speaking of the videos, I've been trying to watch the "Healing with Food" series all morning now. Youtube seems to be malfunctioning. Any video I click on won't play, the little "file loading" (or whatever) circle in the middle keeps spinning and spinning, or the picture itself is frozen and the horizontal thingy at the bottom that moves along while the video plays starts to move but no sound comes out.

Figures, today of all days when I've got some time to watch them. Can you say General Law? :curse:

P.S. Made some buckwheat pancakes with pecans and berries in them. Ate almost the whole batch. I'm never gonna lose any weight at that rate! ;D

Something happened a couple of hours after my post on the date bread though. My stomach got upset and I had pain that lasted for a while. I don't know if this was a reaction to the flour, as I have cut all flour products off my diet. I have still been nibbling from the remains of the bread (too delicious to resist and partner made double quantity), with no apparent problems, but I have not eaten the same quantity I have on the first day. I think I need to properly test it once again by eating more of it.

Anyway I will definitely try that bread! A way to test my reaction, and even if I find that I don't react well ( :(), my partner will be thrilled with this new alternative to his regular less healthy bread!
 
A hint for locating date paste, find a specialty market that sells middle eastern foods.

There are many middle eastern residents in our area of France, therefore most of the markets in town have an aisle with foods and ingredients from that part of the world. It would seem that any moderate sized city in the states would have at least one market that caters to that clientele. There you will likely find date paste.

I might add that Burma Jones makes some killer cocoa date balls by rolling balls (about the size of a large grape) of the date paste dipped in pure cocoa powder. They are a great treat.
 
Date bread can really "move" through your system because it is kind of like eating a LOT of dates (or prunes!), so take it easy! Lots of fiber in there!

Just wanted to note that I tried this again yesterday, but this time with blueberries and bananas instead of the date paste. It turned out really well, and it's almost gone -- I have to make another batch soon :)
 
I too tried a plain buckwheat version without any fruits. It didn't come out too well, it was too hard. I used about a tablespoon of lemon juice for acid and increased the sweetness with a tablespoon of stevia liquid. I did about 3/4 cup of flax and water mixture for stickiness and volume, but it seems it needed more because it wasn't gooey enough. Maybe more lemon juice to make it rise more and be fluffier.
 
I finally was able to make this last night - am glad I froze one loaf because i would eat it all day! I was so surprised at how light and airy it was - i expected it to be much denser, but it is heavenly!!

I did substitute a bit of brown sugar for some of the xylitol, just to make sure i could handle it - but it seems to be fine and will not use sugar next time. I do not have a large mixer, but do have a food processor which I used to chop the dates a bit more finely than i could by hand and I was then able to mix it all w/out needing a mixer.

Last holiday season, I tried to make GF versions of zucchini bread and carrot / orange bread with limited success - there was no one rushing to get the recipes, anyway! So - I am really glad to have something to bring that I know is really great!! Now am wondering how I can make it with zucchini. Zucchini has a lot of water, so I assume i would just reduce the amount of water and use about the same amount of zucchini?

I'm not much of a cook, which I would like to change, but I did successfully complete the date bread. I didn't have enough dates so I substituted organic apple butter and some almond butter. I also used the almond butter on some GF bread that day and I may be allergic to almonds because I hadn't had them in awhile and ended up with itchy skin when I was trying to sleep. Overall the date bread turned out well, especially with some butter. Still getting used to the taste of buckwheat. Some time ago I made buckwheat all by itself and couldn't stand it, even when mixed with other stuff like rice and pesto. Didn't taste bad at all in the date bread.

Next one I think I'll make with blueberries and banana or one of the other variations and also try some pancakes or the bread described above.
 
I am in the process of making some muffins, blueberry muffins. I'll use buckwheat and rice flower as main ingredients and honey and berries for the sweet taste, and will see ... The rice flower is easy to make at home and I am curious to see if it works well.

If it's good, I'll post the exact ingredients for you to try.

I made yesterday some small cake only with buckwheat - it tasted kind of bad :lol:
 
Ok, I am doing it now.
I used a cup for mesures that holds 250ml

Recipies:
1 cup canola oil
5 egs - optional
3/4 honey - this is not too sweet so you can put as much as you like

Then, in anther bowl you put:
1 cup buckwheat
1 cup rice flower or whatever else you want
1/2 teaspoon of sea salt
1/2 teaspoon arm&hammer

Now, you mix this with the first one (preferably with a mixer) and then you add 2 1/2 cups blueberry.

This should be delicious! It is not yet ready ... :cool2:

edit: oh and you put it in the oven for 1h at 350F or 180C

For a more detox-friendly recipe, I would suggest substituting olive or grapeseed oil for canola and xylitol/stevia for the honey. Canola oil is usually GMO and honey contains sugar which is Eeeeeeevillll!!

I'll replace canola with olive oilo next time ... me and mother could not agree on this one :mad:
As for the honey ... maybe replace it with pineapple

Recip:
organic turkey
7 egs :O
1 boiled patato
lots lots of dill
2 teaspoons pepper grains
1 teaspoon sea salt
6 medium pickled cucumbers (home made)

Mixed all and put in a low tray greased with butter. Will see ... :cool2:

If you see any evillll things in here, please shout !!!

edit: forgot again - put in oven for 30min max ; 350F / 180C
 
Ok, I just learned that the turkey must be made/cooked (as you usually make it ) before you mix it with the other ingredients ..
