I just received my Dot connectors magazine, and i SO wanted to make the date bread.I even dreamed of Laura last night, she had made a fruitcake, and it was delicious! - I didn't have enough butter though, so i decided to try something else.
I mixed a bag of dates (200g I guess), 4-5 tablespoons of organic extra virgin coconut oil, some 100% cocoa powder and a little grated coconut in my foodprocess er.
I rolled the dough-thingie to small balls, and covered them with grated coconut, and in the fridge they go. Yummie I say !
Tip : warm up the coconut oil a bit before grinding it with the dates, that way your foodprocessor probable won't smoke, like mine did..
Tip : put the food processor in the kitchensink while rolling the balls, it gets really messy, when the coconut melts in your hands. Press the hands hard together when rolling.
Added bonus : Really soft hands afterwards, and a good way to get some healthy fats in my kids.
