Paleo tortillas and crepes

I have been making these for a few months. They are excellent for many applications; wraps, cut/fried as dipping chips, even as egg noodle replacements in chicken bone broth soups (sliced in linguini-thickness strips). I sometimes make a breakfast burrito with bacon, lightly scrambled egg, mayonnaise and diced onion. There are many things that these can be used for. They are very pliable and won't tear or break... and they taste good.

You will need to double or triple the recipe if you want more than 3 tortillas. I thin the mix with either a bit of water or coconut water for a thinner crepe-like wrap. I notice that the author has also added this step.

The ingredient list, below, is from the current recipe iteration at the website where I found it (link below). The original recipe called for 1/8 tsp of baking soda, but the author claims this is no longer needed. I will continue to add it to mine since I like the bit of lightness that it adds to the final product.

Ingredients for Simple Paleo Tortillas

2 eggs
1 teaspoon melted ghee (sub: melted coconut oil)
Update: 1 Tablespoon water makes the batter more spreadable / thin
1/4 cup arrowroot powder
1 teaspoon coconut flour
Pinch of salt
If making crepes for a sweet application, add 1/4 teaspoon vanilla extract
