Here is a new recipe that I tried last week, it was delicious!
2 pounds ground pork (preferably pastured)
1/2 cup finely chopped scallions
2 TBSP grated ginger
2 TBSP grated garlic
1 TSP chili flakes (optional)
1 TSP black pepper
1 TSP Kosher Salt (if using pink or celtic salt, 1/2 TSP will do)
1 TBSP Toasted Sesame Oil
Ginger Aioli
1 cup mayonnaise (I make my own)
1 TBSP Grated Ginger
2 TSP Sriracha (or other hot sauce)
1 TSP Salt
1 TSP Pepper
1 TSP Lemon Juice
Directions
Burgers - Mix all ingredients together being careful not to over mix
Cook in a cast iron pan or skillet
Aioli - Gently mix and serve atop burgers.
Note - I wrapped mine in a couple of lettuce leaves.
