Pickled Eggs

We finally got around to making some pickled eggs, and they came out delicious!

We used pretty much the same recipe as for sweet bread and butter pickles:

For a 1L jar:
About 16 hard boiled eggs (peeled, of course)
1tsp turmeric
1/2 coarse salt
1 pinch of celery salt
1/4 tsp mustard grains
2 tsp xylitol
and then, only apple cider vinegar (no water)

We just filled in the jars with the eggs and the spices, added vinegar, closed the jars, and processed them for 20 minutes in boiling water. Two weeks later, they came out great. They have a nice yellow color from the turmeric, and a nice hard consistency.

We also tried with ginger and vinegar, but they came out too vinegary. They are good too, but the above recipe made them much more flavorfull. Well, it will depend on everybody's taste.

Thanks Ailen for posting. last year I pickled couple of dozen using alana's recipe. they came good and I consumed after a month. yes, they are little vinegary, I will try your recipe. Easy to make too.

Will the lids seal after 20 minutes in boiling water ?
 
i did some egg pickling in boiling water bath( for the first time). they came well and cans got sealed too. Need to check the taste after couple of weeks.
