For use with cold pork and fish.

Make a basic mayonnaise:
3 egg yolks
2 tsp Dijon mustard
6 tsp lemon juice
¼ tsp salt
¼ tsp garlic powder
½ tsp ground pepper
400 ml grapeseed oil (or more depending on consistency required)

Or, make your own preferred mix.

To the above, whisk in another 100 ml grapeseed oil (the basic mayonnaise consistency will get diluted as you add the following ingredients)
1 tsp lemon juice, add to the mix
Shallots (amount to suit your taste), finely chop, and whisk into the mix
4 gherkins, finely chop and whisk into mix
3 tsp capers, chop and whisk into mix
1 tsp parsley, add and whisk in
½ tarragon, add and whisk in

Spoon into a storage jar, and enjoy with cold pork or fish. :)
