I´m a busy mom of 2 teenagers and we often want something sweet
, so I always search for easy and quick receipts for cakes.
I was asked to share them many times but I forgot, so here they are now.

), but really - you can´t go wrong with these.
Here are 2 very easy and quick receipts.
Note: in all my cookies and cakes receipts I always and exclusively use Gluten Free Cookies and Cakes MIX, Schär; with this flour you really can´t tell that it´s a gluten free cake.
Simple and quick cherry cake 
Don´t have an actual photo of one of my cherry cakes, but this one looks similar to how mine ends up looking:
Ingredients:
Original receipt says to use about 600 g cherries (about 550 g when you remove the pit); since cherries are not available except for 1 month in the summer, I buy cherries in a glass jar which is a cheaper and more available option. I drain the juice, of course.
Also, this receipt works great with frozen berries; I used frozen blueberries instead of cherries and the cake was amazing. I only wash them to remove extra ice and leave them to melt a bit before putting them on the cake.
250 g Gluten Free flour (see above)
2 eggs
190 g sugar
2 vanilla sugars
240 g sour cream - I use crème fraîche
120 ml oil
2 teaspoons baking powder
a pinch of salt
I put eggs and sugar in a standing mixer and while it´s mixing, I weight other ingredients.
Then I add oil, cream, and mix of flour and baking powder.
While it´s mixing, butter the baking form.
When it´s done, I pur the dough into the form and put cherries (or berries) slowly on top so they are more-less equally spread on the cake.
Bake on preheated oven on 180 degrees, for about 15-20 mins and is done! (depends on the oven; also, I bake without the fan.)
You can put a bit of powdered sugar on top.

Simple and quick apple cake 
When I once remembered to take a photo of the cake, this was how much was left of it
:
Ingredients:
4-5 big apples, sliced
2 eggs
100 g sugar
100 ml milk
200 g Gluten Free flour (see above)
10 g baking powder
cinnamon
vanilla extract
butter for the form
extra sugar and cinnamon for the topping
I weight and prepare the ingredients so that while the dough is mixing, I can in parallel remove the core of the apples and slice them up.
So, I put eggs, vanilla and sugar in a standing mixer. While that is mixing I´m preparing the apples.
Then I add milk, and then I add a mix of flour, cinnamon and baking powder. By the time the dough is ready, I´m also pretty much done with the apples.
Then I put the chopped apples in the dough, mix them all up, and then I pour the mass in a buttered baking form.
Bake about 15-20 mins on 180 degrees.
When the cake is almost done (at about 15mins), I take it out and generously sprinkle the mixture of sugar and cinnamon on top.
Put it back for another 5min and it´s done. So overall baking time is about 20mins (depends on the oven; also, I bake without the fan).
You can skip the last step (like I forgot in the picture above
) and simply put powdered sugar on top once the cake is done.

corn starch, corn flour, rice flour, lentil flour, modified tapioca starch, thickener: guar gum (unfortunately, the ratio of each is not listed on the package);
note that there is no potato starch in it - in my experience, potato starch and other so called universal mixes of g-free flour in general make cakes and cookies bready and not very tasty.)
