What's a typical day for you (keto)?

Something like this, or some variation is definitely something I could do. But are you getting all your essential vitamin and nutrients eating this way? Do you use a lot of fresh herbs like is suggested in Keto-Adapted?

As far as I know magnesium, fish oil and vitamin c are the only nutrients which you can't get enough being on keto. Fish/krill/codliver oil is very important. I usually use fermented products: _http://www.greenpasture.org/public/Products/CodLiverOil/

I did a quick check of pork & butter & sauerkraut on nutritiondata.com and I don't really think you would be getting everything you need strictly speaking -- perhaps there is more variety than that, but being raised that I need to eat a variety of foods to get all nutrients I find it hard to accept. Is there anything online you know of I could learn about proper vitamin/mineral supplements w/ keto? I question the effectiveness of stand alone supplements outside of the food sources.

In that same train of thought, has anyone tried to identify which vegetables/herbs would supply the most bang for the buck? The highest amount/variety of nutrients for lowest amount of net carbs?

Well, ketogenic diet IS simple and minimalistic. What nutrients in particular are you missing?

You are correct that Pork cannot provide all of the nutrients needed. For nutrient density, grass-fed/pasture-fed organ meats should ideally make up a large portion of the diet. If quality seafood is not available, then plenty of grass-fed lamb and beef should also be introduced to make up the deficit in omega-3s. A quality krill oil supplement is also ideal.

You may also be interested in sticking purely to seasonal variations in the food that you eat. So in the winter, there is very little variation in food available in the natural environment other than meat, fat, and perhaps a small amount of vegetables. In the summer however, it may be preferable to introduce a wider variety of greens and salads.
