"Where does arrogance begin?" & "a littany of illnesses"

You can avoid all veggies if you want, but I eat a bit of beet, carrot, peas, green beans, and lettuce now and then. Those are the ones that I've found don't bother me if I don't eat too many too often.

Added: I just feel pretty certain that you will be pleasantly surprised with the improvements to health by changes in diet. It sure amazed me.

Right now I've got a glitchy shoulder (like severe arthritic pains) because I ate something with almond milk in it the other day. I know it will take a few days to pass and I won't be making that experiment anymore!

Is it possible that I am a big enough threat to the lizzies that some, most or all of my health issues are a plot to slow me down or inhibit me enough so that I don't have the time to dedicate myself fully to doing the work? Am I simply arrogant in this supposition?

It is not so much arrogance as it is self-importance--something most of us experience to one degree or another until we learn to see ourselves more realistically.
There are several discussions of self-importance on the forum--it might be helpful for you to use the search function and read up on some of them.

Also, once the Cs were asked "how could I be targeted--I'm just a nobody?" and the reply was "nobody is a nobody." I take this to mean none of us are necessarily "special" and
that we are all equal opportunity "victims" of 4D STS negative influences--which, in short, is called "life on planet Earth in 3D." So you might want to learn how to do some EE breathing exercises (check out the threads for that too) and relax a little about those fears of attack--we are all in the same boat so to speak.

Good luck with the diet changes--they can literally work miracles not only on the body, but the mind and emotions too.
