Well, modern diets are a whole subject on their own, even when taking gluten in account or not. Wheat in our societies is older than history, but consumerism has made sure that many limits are pushed aside.

As for seeing what gluten does. I won't be surprised really. I mean, our basic element for survival, oxygen, is also what slowly ages and eventually shuts down our organs. It wouldn't come out of the blue if anything else harms our bodies as well.

But ye, gluten is almost everywhere and without an acceptable disposable income, I won't be able to even try and see for myself whether abolishing it makes a difference. But at some point in the future maybe. :)

That's your choice of course. Even you try to get healthier (physically, emotionally, and mentally) or you continue to feed on what society has been recently programmed to. Agriculture (introduction of grain products) as a historically recent event, was an evolutionary error both for health issues, and for the human society as a whole. A whole body of scientific research is at your disposal in the http://cassiopaea.org/forum/index.php/topic,22916.0.html thread, and in many articles published on SOTT. You study and you decide.

For the eating at the university problem, you can always remove what is harmful and only eat what is healthy. Also, if the serving is the same as at the university I went to in France, you can negotiate to have some products replaced by others. There is always a solution when one has a will.

Well, sadly I'm not in France. ;) Like I mentioned, we have 2 weekly schedules that rotates between each week and repeat themselves.

Each day has open breakfast (in the sense there is not limit to what we can get) and after that the noon meal and dinner are like this:

Dish #1 or Dish #2
+Salad of our choise (out of: cucumber+tomato, cabbage+carrot, beetroot)
+Dessert,no choise, just a different one every 1-2 days

Aaand that's it. It's "take it or leave it" pretty much. And I doubt my will could do anything to change their minds.

So trust me, it's not exactly "my" choise. There's not much I can do when after paying my bills/loan I got ~60-70 euros to spend for the upcoming month. :P

Trust me,especially when it comes to food, I'm anything but programmed from the society. My one and only option, like I said, would be to check the schedule and nitpick which days have acceptable food and which don't. But having to buy and cook for more than 2 days a week for a whole month is impossible for me right now financially.

The cafeteria is closed down for a few more days, but as soon as it opens up I'll try getting its schedule and transfer it here. We might be able to find a way around what is and what isn't healthy and whether it's possible to completely avoid gluten and dairy products at the present time.

Avoiding gluten and dairy products is indeed a good way to start cleansing the body.

Well, perhaps you could grab extra bacon from breakfast to save for lunch, putting it on your salad. That is, if they serve bacon and you are allowed to get extra.
