Gluten free diet question

I quit gluten, corn, soy and wheat 3-4 weeks ago and my headache lasted 4 days. I never did like caffeine though. It makes me hyper and then irritable feeling.

Oh boy! I eat brown rice quite regularly, and use a lot of rice for baking. It does makes my stomach bloating, but I don't get the nasty cramps I usually get when I eat wheat.

So much to learn, so little time!

So far I have not found a milk substitute without it except for almond dream, but I am allergic to almonds. I intend to try to make my own pumpkin milk in the near future.

I reckon everyone who wants to use some sort of milk is probably better off manufacturing it him/herself. It's also very easy.

Here are the steps:
1. Probably good idea to soak the seeds/ nuts overnight in water. Especially important for almonds as they remove tannins and other enzyme inhibitors.
2. Wash the soaked grains in water
3. Put in blender with desired amount of water and blend the heck out of it! (Some do it with increasing amounts of water ...)
4. Strain through a mesh (easiest is a nylon mesh, to be found on ebay (search for "NUT BAG" ... :lol:)
5. You then may add salt and/or xylitol to make it taste a bit more like cow milk.

It's really easy ... Enjoy!

Maybe I misunderstood, but I was looking for in the thread
"Carrageenan linked to tumor"
and I did'nt find it related to coconut milk. I know there is a bunch of kind out there. I use one kind it's in a can, made in Thailand "AROY-D" the brand name and I buy it in the closest Chinese market.
Ingredients: Coconut extract 60%, water.
It's very good for cooking, for smoothies, etc.
Very delicious!

I have been cutting gluten out of my diet for the past five months and it's still a great effort, but well worth it! I ate gluten a few weeks ago and my body showed seven symptoms of inflammation and gluten sensitivities. It was horrible! When I first cut it out (well, cut it 95% out) my body seemed to have die off reactions, with splits on my finger pads being the most painful. Now the pads of my fingers are smooth and virtually eczema free too. I was hoping to be rid of the eczema by the new year, but I ate something out on NYE that made it come back..:/ Eating out is so difficult now since I've detoxed, but detoxing has made me so much healthier and put me more in tune with my body.

So, best wishes to you on your detox journey, chachazoom! Hang in there and it will surely teach you something about the way your body reacts to certain foods. Also, if you take a B-complex vitamin be sure it is wheat-free. That was one way gluten used to sneak into my "gluten-free" lifestyle.

And to answer your question, I recommend unsweetened almond milk. :)

I am not trying to speak for RebeccaS, but just wanted to let you know that corn is evil, too. :) Although dairy is very evil.
 
so I've just read lol. I have ALOT of reading to do! Lectins? Who knew? I'm searching around for safe vegetables or at least find the best way to prepare them to kill these dastardly lectins. I've cut out nightshades, dairy, eggs even and now rice, and it seems there's not much left!

Everyone is an individual. The only way to know if you have gotten rid of ALL of the foods that you cannot tolerate, is to do the detox diet and then start reintroducing foods back in, one at a time. And after doing the detox diet for at least two weeks, your body will let you know when it doesn't like a particular food. Not always right away, but it will let you know. That's why you only introduce one food at a time for a 3 day or so period.

Hope you'll give it a try.

You can significantly ease the "feeling horrible" of detox and de-addiction with 5-htp, GABA and SAM-e. You'll need to experiment a bit to find exactly how much to take and which of them is most beneficial, but there ARE tools to help through detoxing.

Well, I often eat eggs for breakfast, with Laura's sausage, buckwheat pancakes, and bacon. I just recently stopped drinking dairy milk and eating cheese though after you reminded me it was bad. I nearly forgot about detoxing that!
As for corn I read it was bad here on the forum and in some other articles being passed around facebook by members.

I lost 8 lbs in four weeks, I am really happy about that, because now I am my ideal size. I feel great now too. My mind is a lot clearer and sharper, and I stutter less and don't mix up works nearly as much. Yippee! I was taking GABA and 5HTP during the detox since I'd been taking those for several months. I think the next step will be to do the ultra mind quiz, and then DMSA, since my dental insurance did cover getting to mercury fillings out.
 
well I've been learning alot. I needed to really go through some diet and health threads from beginning to end as information was updated. I feel MUCH better eliminating from my diet. But here's some really great news. As I was researching thyroid issues, I started looking at my daughter who exhibits symptoms that I didn't, and a light went off that she too has thyroid issues. She was always cold which I never noticed in myself, or knew it was a symptom and she was fatigued (which I thought was due to her asthma) and many other clues which I never linked to thyroid. This daughter has always eaten what I thought was very well, but she joined me in the elimination diet and guess what? Her asthma MUCH improved! 2 weeks she said her asthma was fine.
So then she came home the other night and looked wheezy. I asked what she ate and discovered she had a chicken burger on a bun and the chicken had a coating too. She also had a drink with dairy in it so I'm not exactly sure which triggered her, however she did say after she ate the chicken burger she noticed wheezing but to stay safe she's going back on dairy/gluten free. She has also eliminated sugar completely for the past 2 weeks as well. Within this two week period where her asthma cleared, I hadn't realized about rice and my daughter was eating it and it didn't seem to trigger asthma.
I am very hopeful that we are getting to the bottom of things.

I've already asked myself what could be used as milk replace. Unfortunately, I couldn't find yet any suitable product where I live without additives, etc. :( I am still searching because I am a coffee drinker and I am not sure whether to quit this or not (Mate tea could be a replace for coffee; what do you think?).
I observed one peculiar thing: The years prior to Ultrasimple Diet and the very diet tips offered here I stopped from time to time my daily coffee consumption (usually 1-2 cups a day), and yes, I got these very headaches, too. It's very common. But after I changed my diet completely and implemented all the recommendations and tips and stopped coffee for a couple of days or 1-2 weeks (I can't remember how long it was) I didn't get headaches at all, or it wasn't noticeable at least. However, at the present time I drink coffee again.

Yesterday I decided to try some dairy in the form of yoghurt. Previously, before excluding gluten and dairy, I never noticed any adverse affects when I consumed these. I did the exclusions more for my thyroid issues/eczema/over all health to find out.
So yesterday an hour or so after consuming I began feeling acid reflux.This isn't unusual and not exclusive to dairy consumption (although I'm not sure as I used to get it here and there and never took notice of what I ate) but about six hours aftering ingesting yoghurt I noticed an ache in a weak spot that usually only bothers me occasionally and in the middle of the night as well as a sore stomache starting up. The stomache ache got worse and worse (I never get stomache aches) and it was very uncomfortable.I was feeling sick and the gut was really sore so I found an old bottle of milk of magnesium and drank some for relief. I noticed alot of gas after but felt better.
So what I'm wondering is WHY haven't I had this reaction before? The only thing I can think of is that I've detoxed somewhat and that somehow makes me more sensitive? I don't understand how, it's either that or I never noticed how I was feeling in general before. I think I was de-sensitized to bloating and gas and aches and pains to a certain degree but it never came close to what I experienced yesterday.
