I want to cook some Bone BrothBONE BROTH WITH MARROW BONE, FEET OF PORK and CROSS OF VEAL
Ingredients
- 12 to 15 marrow bones (according to the size).
- 3 to 5 feet of pork (according to the size).
- 1 or 2 cross of veal (it is the knee bone).
- Salt, pepper, turmeric, ginger, mixed herbs of Provence (thyme, laurel, rosemary), or quite different spices or herbs which would have your favor.
But I didn´t get the cross of veal, is there anything I can use instead or is marrow bones and feet of pork good enough?

Yes, I had omitted to specify this step, which I also do, including for other recipes such as pot-au-feu... This is basically a matter of removing the impurities that are trapped in the scum. I do it twice, and that's it.Added: some recipes I saw recomended gently boiling the bones and feet for 5-10 mins to clean them, you then remove the scum that comes to the top. This is quite common in vietnamese Pho recipes, so I tried it. Despite lots of white frothy scum coming to the top I don't know if there was a real benefit to doing it.
