Brown Rice for better health

I have been using brown rice with vegetables, garlic and ginger done as a stir fry. I cook fish mostly but also chicken to go with it. The difference is tremendously less bloating. Now, I am almost afraid to eat much else. I did and was constipated for a couple of days(ribs, scalloped potatoes & broccoli salad with cheese....yuck). I couldn't wait to get back to my routine.

I am down to 1 tsp of sugar with my morning coffee....I know...coffee was not an issue till I was given an espresso machine. Now I need 1 in the morning. I can't drink the public coffee and only seem to like the stuff I make at home...well the Kickinghorse brand to be more specific.

People are noticing that my look is changing and are asking what I am doing. So, it seems the more healthy we look to people who know us, the more they want to know what we are doing so they can do the same. That made me wonder if this attitude will be consistent with all the issues, as worldly things continue to fall apart.
 
okay here's a simple daal soup recipe that the wifey uses:

Ingredients: To serve 2 adults

1 pressure cooker :)
1 cup split red or yellow lentils, washed thoroughly. (You can mix these 2 types if you wish, but not with other types of lentils such as chana dal/split chickpeas)
1 slice ginger, 1 inch piece, peeled, then minced
2-3 pieces of garlic, minced.
1/2 teaspoon of black mustard seeds
1/2 teaspoon cumin seeds
1/2 teaspoon fenugreek seeds
1/2 teaspoon ground turmeric
1 teaspoon salt (or to taste)
3-4 teaspoons Oil - we usually use grapeseed or extra virgin olive
1 medium onion, minced (Optional)
3-4 small green chillis
1/2 teaspoon sugar (optional)
some coriander leaves for garnish

Directions

Take the lentils, wash it thoroughly (may need to wash it 2-3 times)
add 3-4 cups of water and pressure cook it (it has to become soft and mashable) for approx. 30 min., or 4-5 'whistles' of the pressure cooker. It does not matter if it is over cooked. After done keep it aside. Note: If using any other type of lentil (such as chana daal), the cooking time should be 45-50 min.
In a wok, add 3-4 teaspoons of oil and heat it
Add 1/2 spoon of mustard seeds. Let it splutter
Add 1/2 spoon of cumin seeds and fenugreek seeds fry it for 1/2 min in the oil.
Add 3-4 green chillis and fry it for 1/2 mins. <Optional> Now is the time to add the onions and fry them until translucent.
now add de cooked lentils. add warm water if it is too thick (as per preference) and mix it with the above ingredients. (if desired, can add 1/2 spoon of turmeric powder)
add salt as per taste
cook the lentils for about 3-4 mins until it gently bubbles.
<optional> add 1/2 teaspoon of sugar for a slightly different taste.
Can garnish it with some coriander leaves

voila! daal soup is ready! goes well with brown/red rice. a side dish of salad, or pok choy stir fried lightly in little oil and black mustard seeds goes well with this.

Update: If you plan to have this with rice, then the soup consistency can be slightly thinner.
 
recipe for the pok choy that goes with the daal + rice combo above:

wash and chop greens (preferably pok choy or spinach)
in a wok, add 2-3 teaspoon of oil and heat it. add 1-2 small pieces of minced garlic and 1 dry red chilli, fry for 1 min in medium heat
add de greens and close the wok for 1-2 mins with a lid
add salt and mix the sayur. cook for another 2-3 mins (ensure that it is not cooked fully - has to be semi boil)

this is meant to be eaten as a lightly cooked, semi raw side dish.

How to get unsoggy rice?!
I have a long story of cooking rice to a messy consistency, and now i did it again :rolleyes:

Had the untreated long brown rice in cold water 15 hours with 1 tsp lemonjuice, rinse, add new water ( 6 cups on 3 cups of rice), cook it to a boil, remove froth, add salt, and cook on lowest temperature (1) for 40 minutes with lid.
what I get is a big messy pot of rice, looks like risotto but with starch as the filler. Any tricks on how to save it ? I tried rinsing some and frying up with egg and ghee which turned out just about ok, but was looking forward to a weekend with just boiled brown rice.

Hi Manta, I'm not a rice-cooking expert by any means, but have seen the wifey do it enough times to make some good guesses :) It looks like you're adding too much water to the rice. brown rice does need a little bit more water than white rice, but only in the order of about 20-30% more. The other thing is that its much easier to make it in a pressure cooker, or a rice cooker than in a pot - that requires some experimentation.
once its cooked with too much water though you cant do much about it. but there is always next time :)
try again in smaller portions.

EGVC, I don't know what is coffee colonic but if it is based on caffeine, you should be careful!

Actually, coffee enemas are a great way to detox. You just want to make sure you are using the proper amount of coffee for it, because using too much can cause a caffeine rush.

I'm sure it will be a good rush! Yeah coffee enemas are great, just make sure to use organic coffee. This are great for cancer patients that need to detox mind, body and soul. Remember that this colonic not only cleanses your intestines, but also the liver, and therefore the blood. Also by cleaning the liver you can get rid of nasty emotions and addiction, and that is what I need, it seems the more knowledge I get the fatter I get, and it has to stop this really brigs problems to myself. But I have to admit if I where to gain this kind of weigh lets say . So I have a true valid affirmation that knowledge does protects, My life has change thanks to information and knowledge, I am very very (I'm so very) grateful to this forum and to Laura and the C's and "Jesus" to. And of course I'm thankfull to myself. I think I got out of topic :D

The other day I inadvertently ate gluten :cry: I was munching on a packet of almonds which I usually have as a snack and which nearly always have rice flour added. I'd bought a different brand and didn't notice until halfway through! I tend not to get symptoms but haven't consciously eaten gluten since August last year so I was quite distressed. Well as a friend said I'd probably do more damage worrying about it than the actual gluten but it did prompt me to ask something I've been wondering for some time- since I still eat rice- not large quantities, just in pudding or in the almonds. My question is, is it better to eliminate rice completely (i.e. is it considered to be in the same league as wheat gluten)? Or is it more in the league of "foods to avoid" i.e. because it's a carbohydrate and a grain?
 
If it is possible, less carbohydrates is probably better health for most people. A lot of seeds and nuts can have proteins that are not good for the body. Rice has these proteins, and also it is almost all carbohydrates which breaks down into glucose which is not great.

If you look at some other threads, meat is probably the best option diet wise. If meat is too expensive, or not a good quality (GMO-grain fed, or containing other chemicals) then grains and nuts are better than other options... Rice can be fermented or sprouted which does help I believe.

If high quality meat is to expensive I would substitute with more fish, vegetables, some fruits and maybe nuts but I don't see any reason to eat neolithic grains loaden with antinutrients and prolamines.

I didn't know proteins in nuts are similar questionable like protein in seeds/grains. Interesting. Do you have more information on that topic?
 
Strictly speaking, if you want to be gluten free, you have to avoid all types of rice except wild rice since rice does contain a type of gluten.

However there is less gluten in rice than in wheat.

I think what we call seeds and nuts are biologically similar in some ways. Ofcourse it depends on the specific plant in question. I was more or less just guessing in relating the two. I know that people can have inflammation or allergic response to nuts. The same goes for gluten in wheat and perhaps the certain protiens in rice also. It depends on the person and specific plant in question I think.

I'm on to the carbohydrate thing- my copy of Life Without Bread arrived the other day! For a long time I've had blood sugar problems even though I didn't really like sweet foods that much. I couldn't really understand why but then I was still eating potatoes! Because I think I tend to be extra sensitive to blood sugar dips I have noticed big improvements almost immediately on cutting down on potatoes. I think potatoes are next on my "totally eliminated" list!

I would be careful of fish and vegetables nowadays too as per the C's session of 13 February 2011:

It seems like there is less and less that we can eat every day- maybe we're preparing for not eating in 4th density??!!
