Actually, for someone with your diet, it's usually wiser to eliminate one thing at a time so you don't set yourself up to fail. For instance, you could remove all grains (gluten, rice, etc.) first, then in a few weeks, eliminate dairy, then in a month or so, eliminate sugar - to try to do it all at once is usually too much for most people.
Very important point, anart. I didn't mean to imply doing it all at once, but I meant before all the reading to know how to lower carbs and transition to a ketogenic diet. The way you laid it out is really good, as it eliminates one poison at a time (and the worst ones first).
