Thank you for the suggestions from the both of you. Maybe one of those Mexican meat markets around here would sell something like that.
Apart from finances, the other constraint is my work schedule. I could be in the office all week (with access to a microwave) or I could go a whole week and spend most of it on the road as my job is very on demand. Even some days I would carry a lunch of meat and suddenly find myself in the field all day without returning until after 5pm.
I tried fasting through lunch when that happens, but that just led to weight loss and I've always been at a very low body fat. Hence why I moved to sandwiches, since they can be at least be eaten on the go. I suppose I could try rice instead, but there is at least a degree of filling with the peanut butter in the pb&j. I will give rice a try this week, either pilau or coconut rice, and see if it's enough for lunch. It's a struggle, though, trying to find enough time in the day to cook during the work week.

Rewriting history is apparently harder, when many people remember it correctly as it happened. I find it's easier to get the fat into my system via bone broth. The water content makes it easier on my stomach, which also used to have quite a hard time handling a big dose of fat. I also find that coconut oil and olive oil are both easier on my system than butter, but then, I can't handle dairy at all. Apparently the process of making ghee removes casein from the butter, which reduces inflammatory impact.
Other than that, slowly tapering down into carnivore, or any other diet, is recommended. Our bodies are intricate creatures, and giving them time to adapt is generally a good idea. For some, going cold turkey on sugar/carbs and doing everything all at once can work, but oftentimes it's too shocking and we end up saying, 'screw this' and quitting.
It'd be a good idea to switch to rice or oats instead of bread, especially if the bread you're eating has gluten. Even better would be to find non-GMO organic stuff, which will also have no glyphosate, unlike most flour, which is made from wheat often sprayed with Round-up to dessicate it for processing.
I’ve been cooking with olive oil and butter for years. I haven’t tried ghee but I love butter! I don’t know what went wrong but I will try again when I can bear to look at ground beef again. I will also look for broth recipes.
I’m definitely a cold turkey individual. It’s probably been less than three days for me but I still haven’t experienced the side effects I was worried about: sugar cravings, massive sugar/carb crash, etc (in fact I fasted at work today because I don’t like to take lunch to work (this is an issue I have to figure out). It still feels weird to not eat carbs, tho. And I miss indulging in my sugary things, but it’s not a craving? I can’t explain it. But let’s see how I keep adapting throughout the days. I’m sure the cravings will come.
Apparently the stuff I’m buying at Aldi is non-gmo and has no preservatives etc. But not everything, the sausage I got definitely has too much junk, including corn syrup.
I am a little confused tho because @Jo Bugman mentioned eating peanut butter which I thought was really bad, along with all other nuts? I also saw mention of sweet potato, and you’re recommending rice.
