Ummm... what kind of bread? Peanuts are generally avoided by those who are still testing their sensitivities and jelly is almost universally verboten because of the high sugar content. Did you read the opening post of this thread?

Yeah, the closest thing I've got to the old PBnJ is using two buckwheat pancakes, along with almond butter and a little homemade xylitol blueberry jam. I can't have a lot of almonds, but if it's just spread thin I'm usually okay with it. Still, this probably isn't something I'd want to eat every day.

The traditional PBnJ with the gluten bread, allergenic peanuts, and corn-syrup jelly probably exemplifies the worst of the worst when it comes to a meal. :evil:
 
Tonight we had a nice beef stew done in the pressure cooker. It was quick and easy and I needed quick and easy after a day of 1) working on the websites; 2) sweeping and mopping a few large areas of the house; 3) canning 12 kilos of stew beef; finishing up a bunch of laundry. We also made sausage for the next few weeks today and I cut my finger with my snazzy new knife that I got from the butcher.

I use your buckwheat bread recipe, with yam flour and the jelly I use is made of Yacon with no extra sugar added, its great for diabetics, and of course I read the opening post of the thread. :) And the peanut butter I use is organic, but I didn't new it was an unhealthy item, I thought it was good because of the high fat content.

Ouch, is you finger doing OK? I would recommend using Aloe Vera for the wound, it will heal nicely.

Today we had free roaming buffalo burgers, with avacado slices, blinis as buns and steamed spinach with ghee.
tonight's dessert, shortbread (turned out great!) with strawberries and glazing...better than strawberry shortcake! Ymmm
Today's high tea, that amazing buckwheat and walnut/date bread
Spent a good part of the day in the kitchen trying new things--learning can be FUN
 
Tonight is chicken fried in grapeseed oil battered with the blini recipe from the Dot Connector Magazine (really yummy), rice and peas, and beets.
 
Squash & sweet potato soup with beef & gluten-free noodles. Fresh salad greens with cider vinegar/ olive oil with a touch of dill.
 
Tonight we had beef steaks, with mung beans and wild rice.

Last night we had shrimp and scallops cooked in coconut milk with chopped onions and garlic, and saffron and coriander, again with mung beans and wild rice.
 
First day in my parents' house where where I will be living until I can afford to leave. Mom is gluten free but eats a lot of rice, corn, etc. Both mom and dad eat dairy and usually are skeptical of my dietary choices and cooking. Mom usually will try something I make "just to see" but generally ends up not liking or eating, saying that it is "weird". Dad doesn't bother.

Still I managed okay. We all had asparagus roasted in the oven with olive oil and a little balsamic vinegar. Mom and I also had baked salmon while dad had Evil Quiches. Mom had a potato and I cooked up some buckwheat in vegetable broth (checked ingredients and it didn't have anything "evil" in it). Going to try for food stamps while I am looking for a job, maybe I will have better luck obtaining both in this new-to-me location. Mom is really not digging that I now "prefer" (my nice way of saying I want to eat only) buckwheat, amaranth, quinoa, and wild rice as grains (which I sort of don't blame her as it's more expensive, though of course the health benefits more than make up for it) so I need to be considerate and find a way to pay for this myself and not make a huge deal about it. Trying to persuade them to go for sweet potatoes and some more veggies too on the next grocery trip. I am one who seems to do well with a certain amount of veggies though I now eat meat again too with benefits. This thread I think is going to be a huge help, thanks for starting it!!!!
 
Organic quinoa with olive oil as dressing. Afterwords I had some blueberries, I need to get more creative with my cooking. :rolleyes:
 
thin beef strips stir fried in ghee with bean sprouts, broccoli, green beans, carrots, onions and celery seasoned with grated ginger, garlic and salt. I also cooked rice vermicelli which was better than I thought
