Gluten Free diet: What do you eat for breakfast?

I eat a cereal that is gluten free & contains probiotics - it's available here under the name Future Life

I went to the site and it looks like it is soy and corn based. While they may not be GMO, soy and corn aren't really good for you. FWIW.

I used buckwheat flour, blueberries, almond milk, salt, baking powder, and Sweet-and-Low to make some delicious blueberry buckwheat pancakes. I'm going to try honey in place of the artificial sweetener next time. If I can make good buckwheat pancakes, anybody can!

My current super-delicious :P breakfast is now:

Berry shake: ½ - ¾ cup berries; 1 – 1½ cups water; 2 tbsp ground flax seed; 1½ tbsp flax oil; 2 scoops d-ribose; large heaped tsp spirulina. Blended until smooth.

. . . followed by . . .

¾ cup amaranth, salted to taste, cooked in water. Then I add a little ghee, some berries and dates and xylitol. Makes a filling and delicious hot dish after the cold shake.

Amaranth is easy to cook. Use one part amaranth to two parts water. You can use more water but adjust the cooking time accordingly. It makes a kind of porridge. The seeds remain quite hard, but the longer you cook the amaranth, the softer the seeds become. It's much more filling than quinoa, which I find rather too light and fluffy for breakfast.

Depends on how hot it is outside:

If its really hot, I have an ultrashake with coconut milk, brown rice powder, spirulina, stevia, bananas, and frozen blackberries. (I have this at nighttime too if I don't feel up to eating.)

If its not too hot:

White rice and baked sweet potato (also good when the IBS is acting up)
Steel cut oats cooked in coconut milk (If you don't react to them, and I don't.)

Too many buckwheat cakes gives me diarrhea, so I only have those once in a while. :-[

You'll want to forego the Sweet'N Low -- that stuff is poison, and you might try to replace it with another kind of sweetener like stevia or xylitol (you can search for those terms to get a better idea of what each of them are).

For breakfast :

- rice
- eggs - only white part .
- water ;] dropped milk

Why not the yellow part? It's extremely important for balanced brain chemistry.

Lately I've been having:

Buckwheat groats porridge, with rice milk, milled organic flaxseed, and sultanas.

I cook enough groats to last for 2 or 3 days breakfasts.

Since for now shakes are out of the menu for me (no frozen or even fresh berries, affordable anyway, here :(), instead I have organic eggs made with za'atar spice blend and eat them on buckwheat cakes, and with fresh cucumbers.

Za'atar is a generic name for a blend of various Middle Eastern herbs. There are all kind of versions, but mainly it is made with Thyme, Sesame seeds, Oregano and Marjoram. If you are allergic to one of the spices, it is ok to exclude some of them if you make your own. Commercial versions come with Samaq too.

Here is a wiki page on Za'atar. And here is a recipe to make one at home.

My friend also found a link where you can buy Za'atar from Palestinian territories and support them.

Edit: Oh, and you can even make gluten/dairy free Za'atar pizza, and it is delicious. At least this is how I remember it when I still ate wheat. ;) Didn't try to make gluten free one yet.

Dip it in humus with olive oil, and you have yourself a great Mediterranean meal. :)

Wow, thank you! I'm still experimenting with making gluten free breads etc. Mixing my own can be expensive, I'll check out the Chebe site next. :D

I'm really envious of those who can have buckwheat as I really miss buckwheat pancakes. Being a B blood type I never really ate too much of it to begin with, but after being 3 months on the Ultra Simple diet I would react really strongly to it with shakes and shivers.

For my breakfasts it's either millet, quinoa or brown rice porridge with berries, ghee and xylitol. Coming from Central Europe cakes are a must now and then, this week it's blueberry cake made from brown rice flour. Few times a week eggs with veggies, still haven't gotten to the point where I make my own sausages that will be the next step. :)

Hi Shijing! Thanks so much for the tip about Xylitol! I use Xylitol to sweeten my tea, and it just didn't occur to me that I could also use it in my buckwheat pancakes! I'll make my next batch of buckwheat cakes with Xylitol! Thanks again!!!!!!!!
