Introduction
Since the beginning of recorded history, we, the people, have been suffering from all kinds of ailments and diseases. These chronic, persistent ailments have slowly been destroying our lives. As a solution, doctors and pharmaceutical companies have created pills and drugs to treat the symptoms of different diseases, but not the source. So what are the sources of our pains that we suffer from daily, such as headaches, depression, allergies and discomfort?
And what can be done about it? Can we clear away the fog in our minds and bodies in order to live life to its fullest potential?
Of course there are those who believe themselves to be perfectly healthy because nothing catastrophic has happened to them yet. But when we aren’t paying attention to what we are consuming, can we truly say with certainty that underneath the hoods of our human machine, everything is in working order?
Perhaps the solution to a life free of ailments and pain is to look at what we eat. Perhaps the answer, the solution, lies right in front of us.
The Paleo Diet Series will take you on an adventure to discover the truth about the foods we eat and what we can do to change our lives for the better.
Whenever we walk through our neighbourhoods, we go to places like McDonalds, KFC, and Burger King to fill our bellies. When at home, we pick up a slice of bread and put some nutella, cheese or jam on it. Or we stop at a pizza parlour to eat a few slices. When we feel tired, we drink a cup of coffee or latte to give us a boost. And when we hang out of with friends, we indulge ourselves in alcohol to escape the daily grind.
The majority of people are eating foods and drinking beverages that contain gluten, dairy and artificial sweeteners; most of which are genetically modified, GMO.
Also, most of us don’t know what we are eating or drinking and why. We just eat it. Maybe it’s time we start being aware of what we fuel our body with.
This Series will explain the science behind gluten, dairy, artificial sweeteners, GMO foods and all that which is necessary to know in order to guide you to a healthier lifestyle. The lifestyle we were meant to have.
Gluten
Toast! Who doesn’t love it with some butter and jelly on it? And pizza, one of the most beloved foods, where pizza shops offer just about any assortment of toppings that your imagination can come up with. But what has been creeping into the news lately has been the topic of gluten. Even famous athletes like Novak Djokovic have gone gluten free claiming it’s helped his recent successes on the tennis court.
So what is gluten free, and why are more and more people hopping on board this bandwagon? Is it a passing phase or something to seriously consider in our lives?
Well, let’s deal with the bad news first. Bread contains gluten, a protein found in wheat, barley, rye, spelt, kamut, and oats. It is hidden in pizza, pasta, bread, wraps, rolls, most processed foods, even beer. It’s a staple of the Standard North American diet.
Why is that bad?
‘’In the 1920s, the US government found that animals fed a diet of white flour developed serious neurological diseases and died. Instead of banning this deadly product like they should have, the FDA declared that most white flour products must be "enriched" with iron and a few vitamins to "correct" the problem. Unfortunately, this decision has helped create an even more insidious situation that results in diabetes, heart disease and cancer for millions of people. ‘’
Gluten can also inflame the brain and gut by causing an autoimmune response. Autoimmunity is an abnormal response to the body's own tissues. In other words, gluten molecules enter the body, are similar to naturally occurring proteins already inside you, so your natural defense system, antibodies, go into high gear to ward off the foreign invaders. Unfortunately, because of the similarity, these antibodies mistake you for gluten molecules as well, causing them to attack both at the same time. Allergies are a prime example.
Secondly, during the digestion process, gluten can be broken down into strange proteins that are a lot like psychedelic drugs. These are opium-like proteins called gluteomorphines. As you can probably imagine, these can drastically change brain function and behavior – and what also makes gluten containing foods addictive.
Did you also know that there are 55 diseases that can be caused by eating gluten listed in a review in the New England Journal of Medicine? Some of these symptoms are: arthritis, ADHD, depression, anxiety, IBS, lupus, frequent headaches, fatigue, eczema, loss of muscle coordination, osteoporosis, a weakened immune system, fungal overgrowth, organ inflammation, weight loss/weight gain, and malnutrition.
So what most people don't know is that gluten can cause serious health issues and that it’s masked underneath a number of other health problems that most people don’t connect it to. You may be at risk even if you don't have full on symptoms yet or celiac disease, which is the deadliest form of gluten intolerance.
So being gluten-free is a lifestyle choice for health of body and mind. If we choose a gluten-free lifestyle, we are intentionally avoiding trouble both now and in the future.
So now that we have passed that stage, on to the good news. What can we use as an alternative to gluten?
Buckwheat! Just make sure it is gluten free. With buckwheat you can create delicious crepes and bilinis which can easily replace bread. You can check out recipes for it on a thread here http://cassiopaea.org/forum/index.php/topic,12952.0.html.
Also, buying whole foods that are not processed, like sweet potatoes, vegetables and nuts do not contain gluten molecules. There are even gluten-free products available, although you need to watch out for those, as some contain trace amounts of it, but due it being under a certain value, can be labelled as gluten free, when it’s not.
Just remember to stay away from any wheat or flour products from the list we mentioned earlier, or anything containing traces of it. Which if you start reading the labels on the back of grocery store products, you will find are in a surprising large amount of ready-made processed foods.
You can find more beneficial products by checking out local organic stores near you or order them online. It's also important to remember that our body has become very addicted to gluten and that we need to be persistent and patient in letting our body be able to heal itself.
In Season 2 we will be providing a more in depth guideline on the best ways to start a healthy diet. However for now it is important to understand the basics about what you are actually eating.
Artificial Sweeteners
Splenda, Nutrasweet, Sweet ‘n’ Low – these are some of the brands of sweetener you turn to when you want to sweeten that cup of coffee or tea and indulge your sweet tooth with something more potent than table sugar but without the added calories. So you make the substitute hoping it truly will keep off any extra pounds and spare your health. But doesn’t that sound a bit too good to be true? How can something be sweeter than sugar, yet have less calories?
In this episode, we will show you why it’s in your best interests to avoid artificial sweeteners and how easy it is to find alternative, healthier substitutes to both sweeteners and table sugar.
The following are the most known artificial sweeteners among the public:
Aspartame
Sucralose
Neotame
Saccharin
A lot of research has been released about the dangers of artificial sweeteners and how they affect us. Sucralose is created in a laboratory and mixed with chlorine molecules, the same stuff they use to clean pools with and is very close in composition to DDT, which is an insecticide. Gross!
That’s the reason it’s zero calories. It’s so unnatural that your body can’t metabolize it, but you can absorb it into your tissues because it’s fat soluble. In fact, all petro-chemicals are fat-soluble.
This stuff was passed by the FDA with little to no testing and is now in thousands of products on the grocery store shelves. The following are perfect examples of why you should stay away from this stuff:

This may seem overwhelming, but seeing all the data and research on artificial sweeteners can help us avoid the pitfalls associated with it and solidify in our minds the goal to find better alternatives to satisfy our sweet tooth and feel better about ourselves.
There are healthier alternatives that don’t cause the kind of havoc artificial sweeteners do and still add that extra zing to your morning coffee, tea or dessert. These are Stevia and Xylitol.

You may not have heard of Stevia before, but it is part of a family of plants that grow in sub-tropical and tropical America. So it’s a naturally forming sugar unlike all artificial sweeteners and has been shown to induce a lower insulin response than aspartame or sucrose, so you will have less of a blood sugar spike. That means diabetics who are insulin resistant can look to Stevia as a safer source if they are looking to add a sweetener to their meal.
However, one study showed possible toxic effects when taking too much Stevia. But sugar consumption in general has increased exponentially over the last 150 years, so keeping your sugar intake low is much better for your health in the long run, regardless if it comes from natural or unnatural sources.
Then there is Xylitol.

Xylitol is an all-natural sweetener found in many fruits and vegetables. It tastes and looks like table sugar. However one thing to keep in mind is that some people get an upset stomach from xylitol, so it’s best to first try it with small quantities and see how you respond to it.
You may be taken aback by us giving warning signs for the healthier alternatives. “I thought they were better, why are there drawbacks?” And to put it simply, the amount of sugar we consume in today’s world is beyond ridiculous. Human beings, as of 1996, consume over 160lbs of refined sugar on a yearly basis in the United States! In the 1850’s, we consumed an average of 20lbs per year. That’s a disturbing figure. So it seems even in nature, there are drawbacks to consuming too much sugar.
So next time you want to buy anything with artificial sweeteners, remember the danger’s it causes your body and look for the alternatives.
DAIRY
(Insert Jaws type music) There’s that familiar sound of something dangerous coming towards you. Although you may be innocently frolicking away, eating that ice cream or cheese, or diligently drinking that glass of milk because it ‘Does a Body Good’!
It still doesn’t change the fact that something is coming after you from the depths of your stomach, and you probably won’t notice it until it’s too late.
And never mind the fact that Government Dietary recommendations don’t reflect what we need to maintain great health as much as it reflects corporate interests.
When most people think dairy intolerant, they think lactose intolerant. And what is lactose? It’s simply a type of sugar that’s derived from milk products. However, some people don’t have the ability to digest the lactose properly, resulting in bloating, cramps, diarrhea, gas and nausea. Not pleasant!
Although, products like tums have been created to deal with the stomach upsets that occur for people who are intolerant, what these products ultimately do is alkalize, opposite of acidify, if you still remember chemistry in high school, the stomach, causing the stomach to stop digesting the foods altogether!
This SEEMS like a good idea at first glance, no more cramps or bloating, but stomach acids are what break down food allowing all the essential vitamins and nutrients to be transported to your cells and organs, so you can think and feel at your best. Neutralizing this natural process is only masking the fact you probably shouldn’t be eating the stuff.
But, that isn’t even the shark in the water. That belongs to casein. A rarely talked about milk protein that gives cheese and milk that gooey, stickiness to it. Your probably thinking protein is good for us. And it is! But casein acts like a narcotic, causing you to feel good for a while, but like other drugs, can have some nasty side-effects like joint pain and stiffness and reduction in bone density. It’s even been linked to autism, schizophrenia, diabetes and heart disease. Yikes!
You don’t even know it has you until it’s too late!
Also, there are more messages going from your gut to your brain, than your brain to your gut. So if your stomach is in knots from what you are eating, imagine the signal’s that sends to your brain and how your mood is affected by that.
But wait, there’s more! There is the use of growth hormones like rBGH that increase milk production in cows seven fold, increased bacteria and mucus caused from Factory Farming practices, and the fact that we are the only species that drink the milk of another animal! Milk is for babies. Breast milk, that is.
There are other ways of getting calcium, and some delicious substitutes. For one, butter has very little traces of casein and lactose, and ghee has none! So you can indulge in those as much as you want. Also, dried herbs, brazil nuts, almonds, flax seeds and green leafy vegetables are really high in calcium.
And if you are looking for a direct substitute for milk, you can always try coconut milk, almond milk, or goat’s milk, which does contain some lactose and casein, but in lower amounts.
But some research has shown that too much calcium, in the long run, is actually not good for our bones, and may increase the risk of osteoporosis. So just remember, calcium is a mineral that works in tandem with other minerals like magnesium. So remember to balance the two for optimum health.

Soy & Corn

Vegans of the world unite under the banner of Soy. It’s been touted as ‘the new miracle food’ that’s been able to replace meat to create veggie burgers, the mainstay of any sushi meal and marinating sauce and tofu is a popular, albeit somewhat depressing substitute for meat. Oh, and it’s in a lot of processed foods!
But is it really a ‘miracle food?’
Soy has been eaten for hundreds of years in the Far East in its fermented forms of tempeh and miso, since these fermented forms are the only forms suitable for human consumption, though they are not ideal. Fermentation is the key to eating Soy because they neutralize phytic acid and ‘anti-nutrients’ in Soy.
Phytic acid is like a thief in the night that bind to minerals like calcium, magnesium, and zinc to prevents the body from absorbing them, and ‘anti-nutrients’ interfere with the body’s ability to break down proteins. This is very bad because the whole purpose of eating is to absorb all this good stuff from food that makes our bodies go ‘vroom’. And if you have been following this series up to now, then it comes as no surprise to know that most of the Soy in today’s processed foods are not fermented.
In case you didn’t know, Soy is also the second most genetically modified crop following corn. And looking at the previous episode on how dangerous GMO products are, you can start to imagine what kind of ‘miracle food’ we are talking about here. With 95% of all soy crops being genetically modified, not only are you playing the part of guinea pig, but eating foods saturated with pesticides.

What about the “scientifically proven benefits of soy?’’ Remember, these kinds of studies are largely funded and promoted by the multibillion-dollar, multinational Soy industry. Yet again, corporate interests and shady profits are more important than your health.
When we look at Soy objectively, we can see it should be avoided at all times. This is a difficult task though, since soy is found in most processed foods, Including hamburgers, mac 'n cheese and salad dressings.
Oh and by the way, did you know soy contains traces of gluten? Yes it does. Soy can be subject to gluten cross-contamination since soybeans are commonly grown in rotation with wheat crops. Just because less than 20 parts per million of gluten generally is considered "gluten-free," doesn't mean that it magically is ''gluten free''.
Just like soy, corn (maize) is also one of those products that should be avoided. This especially includes High Fructose Corn Syrup, which is deadly because it raises your blood sugars excessively, which is really bad for the body. Life contains ups and downs, but eating excess sugars causes your body to go up and down several times a day, seven days a week, 365 days a year. No wonder human beings are suffering from so many health problems.
Like artificial sweeteners, it was created in a laboratory and is abundant and cheaply added to most processed foods.
Corn is the single most genetically modified crop there is. And remember gluten? In plain and simple words, corn is a grain, so it contains gluten. And yet some people believe corn gluten does not cause damage the same way that wheat, barley, and rye do.
Quite strange, eh?

‘’Many consumers bow to the alter of "Gluten Free" packaged foods as if the label is a safety net. "Gluten Free" on the package does not mean that the food is healthy. Do not deny yourself the God given right to be healthy.’’ So every time you go shopping be aware of the products you are buying, stick to whole, unprocessed foods and grass fed meats.
GMO Foods
This is a controversial topic because there has been a major push by creators of GMO products to accept them as a safe, viable and in some cases a superior alternative to conventionally raised and organically grown meat and produce. Bill Gates even declared, after he bought 500,000 shares of Biotech giant Monsanto, that this new technology would save the world from starvation.
Really?
Let’s look at our options. Conventionally raised produce is done without the use of genetically modified materials, but is often sprayed with herbicides, insecticides and fungicides to fight off diseases and other organisms that might destroy the crops and use chemical fertilizers to enrich the crops. Unfortunately, this process has led to superbugs that are resistant to antibiotics, and leaves the immune system of crops and animals weak and unable to naturally fight off infections. To add insult to injury, chemical sprays are fat soluble, so they end up in the food and on your dinner table, and finally, in your body.
Genetically modified foods add more flames to this fire. First off, there is nothing indicating that crops have better yields if they are GMO. In fact, suicide rates of farmers in India have doubled when doing business with Monsanto! GMO crops are also invasive, and spread through cross-pollination to conventional and organic crops, causing those crops to genetically modify. And with Bio-tech companies holding patents for their products, they can shut down anyone who is affected by this.
A large number of scientists have spoken out against GMO’s, warning of the dangers they pose to human health, yet are often silenced, fired or sued for speaking up. And without billions of dollars in funds for media marketing, lawyers, and lobbying, how can they possibly compete? Arpad Pusztai, a scientist you probably never heard of, was one of the first to lead an independent team to determine the safety of GMO’s. When interviewed after disclosing his findings, he said “I find that it’s very, very unfair to use our fellow citizens as Guinea pigs” and “If I had the choice I would certainly not eat it.”
He was fired the next day.
His studies showed abnormalities to the internal organs and immune systems of rats fed GMO potatoes for only 10 days.
Government Agencies like are supposed to protect us from the dangers of foods that are contaminated or unhealthy for us, but that’s very difficult to do when former employees of Big-Agra and Bio-tech companies join these agencies and vice versa. Special interests are more important than our health, it seems.
So far, about 70% of all food items at your local grocery store contain some form of genetically modified ingredients in it. 90% of all soybeans on the American market are also GMO. But nobody told you about that did they?
There is a reason why Bio-Tech companies are lobbying against having GMO foods labelled, because if you knew how harmful these frankenfood’s are to your health, you wouldn’t eat it.
So what does this all mean, and what does organic produce have to do with it? After all, buying organic is so expensive. Your health is at risk if you eat GMO, plain and simple. There are no studies to show the long-term effects of consumption, but short term studies have shown a glimpse into the future, and it’s not pretty.
Organic produce is meant to grow food that is sustainable, more nutritious, and at the very least, not as harmful as its counterparts. In the long run, your health is the most important thing, and if you aren’t healthy, you aren’t happy. Plus, if you are trying to save money, wouldn’t avoiding those massive medical bills be a way to do that.
So buy local, eat organic, find a farmer’s market, and make a change with your wallet.
