Canning meat/what Equipment is needed, how much canning is necessary

I've ordered my canner here cause the shipping from the US was way too expensive.
The ship fare from France to Italy it's 36€. Not bad at all compared to the 100 and something dollars from US.
Cant' with for start canning

I received mine two weeks ago and it works fine. I've even made bone broth in jar without any problems.

You are right it really works that way, that amazon takes care of it. So I ordered a Presto canner and should arrive next week :). The best bulk meat I can get is fallow deer, since it grew up most naturally and later on I could get from friends sheep and goat that lived also most naturally. Hopefully from where I get the meat they could cut it, since I don't have saws or scissors and it could get pretty messy too doing it by myself.

And does somebody know how much meat fits in i.e. a 1 liter or 0,75 liter jar, so that I could calculate it?

I can put about 500 - 550 gram of meat in each jar. in my canner I can process 14 jars at ones wich is about 7,7 kg of meat in one go!

I had a go at canning with my pressure cooker the other night- it didn't go too well! I think too much steam escaped (maybe the gasket needs replacing) since the water dried up and one of the jars cracked. I can tell you though, that I got about 800 gms of meat into a 1 litre jar. I might try the water bath method as my pressure cooker only holds 2 jars and I have a 16 litre stock pot which will hold 5 jars...

I hope you're familiar with the dangers of water bath cooking low acid foods like meat. Some say it's okay, some say it isn't. The scientific stance is that water bath cooking doesn't properly destroy the botulinum bacteria and it's spores. Be careful. :)

I usually do 10kg of pork in one go, and end up with 12 one-liter glasses.

yes it is, they have all sorts of glass shapes and sizes for a very cheap price

You could always go to a butchermwho has a bandsaw. Generally they will cut up your bones for a small fee.
Just tell them the meat is from family ...

Yeah, some precook the meat to make sure. Also, a lady told me that canning jars usually break on a standard pressure cooker unless you put like a wooden disk at the bottom between the metal and the jar. She said she has canned every single day for like 3 years and broke only 1 jar this way.

Thanks Aragorn and Psyche. I was aware that the waterbath method is not recommended by many but also that others argue that with sufficient boiling time, it's pretty safe. In any case, although it seems like a lot of money, I'm thinking of going for the pressure canners mentioned above that are imported through France. Things are very tough financially at the moment but I figure they may be even worse within the year so it's probably worth it.

I do have another question about storage. It seems that canned food will keep okay for several years (does anyone know how long?) - the thing is, it's usually recommended that the food be kept in a cool, dark place. Now, my apartment is "relatively" cool here in Summer - but I think it could still be in the mid to late 20's. Does anyone see that as being a problem?

Did you have a look at amazon.com and for a presto cooker? My finances are also not too good (always :)), but I bought a presto cooker for 103 Euros (with shipping costs and import fees). The materials of the cooker are not the best (you cannot use with outdoor heat), but for that price it is fine imo and it didn't explode when I have done a water test run :).

We just bought , ordered this one http://www.amazon.com/gp/product/B0000BYCFU/ref=oh_details_o00_s00_i00 and totasl charge incuding taxes was around 134 euro. Maybe it depends on the company one orders it from. I am in europe so it should be around the same price in total.No? Maybe you could get in touch with Amazon and ask why it is dearer to send to Spain than it is to send to Denmark. I thought europe was counted as one zone when paying postage. Maybe ebay is the way to go if it is not.
