Canning meat/what Equipment is needed, how much canning is necessary

Wow! How is that? I chose from the same list except the item I chose was $49- and yet with shipping and taxes the final total was €243. Then, I tried your link where they were $80 and the final price was €121!!!
Well, I think I'll be ordering that one :D

Yes, that's the one and I'm glad that the cheaper version did work out.

Don Genaro, I´m also living in Spain and bought mine last month at Amazon.com as well, though the 16 qt model instead of 23 qt. Total cost was only 110 Euros, maybe this still could be another option for you.

Thanks Hesperides for the alternative although I think since it's only €11 more for the 23 qt. I'll probably go with that one :)
 
Thank you so much for this thread.

Next week I have an appointment with a lady in my village to see if I can network with regard to all these changes that are/will be going on. She is a vegetarian, so she won't be interested in buying meat in bulk. But canning some veggies together is a possibility. And she has lived here a long time and knows practically everybody.
I felt inspired again by the article that SOTT carried, informing people how they can prepare, but I can't find it on the site.
I am also thinking of asking another lady in the village who is very helpful and she is also an old-timer in this village.

I am also considering what I would do in a crisis. I have noticed now that I am experiencing some health problems that I am not that brave. I go into a state of panic, although I come out of it fairly quickly. I have decided to focus on my mental and physical health ATM, so that I won't be useless when difficult times arrive. Have read Peter Levine's 'In an Unspoken Voice' and Wilson's 'Redirect', so that I know a bit better how to deal with upheaval, for myself, my kids, animals and others. And continuing to practise EE helps tremendously.

I have asked several people in my village to join me in buying half a pig or a whole one, but they are not interested.

I think it is just the question with wich term you must search to find those manufacturing firms of jars and lids in your country. try to you use words like lids, jars and such. I'm pretty certain that many countries have those firms where you can get the jars and lids much cheeper! I get mine for a little ofer 0,50 € each (with the lids)!

Thanks. Indeed I'll keep shopping around over the next few weeks whilst I wait for the canner to arrive :)
 
I just had my first canning session today and it looks like it went well! I canned 5 jars of lard using the Presto 23 Qt pressure canner (even though it sounds like lard can be canned with just a water bath) and the seals look good!

I canned it for 20 minutes (according to _http://www.howtobaker.com/techniques/insane-foodie-projects/how-to-render-and-can-your-own-lard/ you only have to water bath it for 10 minutes, but I hadn't sterilized the jars first, so I thought this would be more than sufficient to can it and sterilize everything, but I'm just guessing on that) and none of the jars broke. I also added salt, which I was hoping would dissolve, but didn't. The electric stove I'm using is very old and finicky, so the pressure read between 12 and 15 (I think PSI is the unit it's measuring) while canning.

My plan is to can lots of bone broth with the right ratios of protein and fat so it's its own meal right out of the jar (should be at least two meals in a quart jar) along with some liver pate or something similar. I've also been stocking up on specifically chosen canned fish, but I think I'm going to skip getting anymore and focus on bone broth.

I feel really accomplished! Using the pressure canner felt a little daunting to me ("what if it explodes?" "what if it all ends up just being a waste of time?" "I don't really know what I'm doing"), but it ended up being pretty easy and now there's a lot more room in my fridge.

Same here! After the canner/pressure cooker arrived, I pretty much gave it the hairy eye for a few days! Even after I went through the directions there was some apprehension but after I did it, I felt like a homesteader and was pretty happy with myself. :D

Yeah I put off the canning for a couple of days too (though I didn't have the little canning set yet with the jar lifter device), but being very very close to out of room in the small section of the fridge that's mine with another round of broth being completed and needing fridge space was the final motivation!

I'm excited about canning the broth, though! I think I should be able to do at least 7 jars a week, but hopefully double on at least some weeks. It'll be quite an operation--I think I'm going to have two crock pots (a big one and small one) running at a time to make the broth to be canned, then canning it in one go. Fortunately the directions say that canning broth only takes 25 minutes at the proper pressure, so it's a bit of a quicker operation than canning raw meat.

And people just throw away the bones...cheapest and healthiest food, stored long term!
 
I made trials to can ghee, and it works good. No problems at all.

I make it normally first in a saucepan. When it is ok, i put it in the presto to 11 lb during 20 mn.

Same thing for bone broth.
