And how do I know if my gut is healed, or still recovering? As far as I can tell I have no itchy candida symptoms anymore, which was sometime ago a little bit unnerving.

I have been eating butter with no apparent side effects. I really miss having a bit of cream in a half-cup of coffee now and then. Mostly I drink tea, but a small cup of coffee is nice and I can't tolerate it black. Also loved goat cheese - it was a saving grace during my Atkins experiment.

I wonder though - how do you know when the gut is healed?

One thing i have noticed while doing EE is that I always want to put my hands over my stomach - and since we aren't supposed to do any Reiki, I cover my stomach with a pillow. I don't know if that is just a protective mechanism i have or some indication that i still have digestive issues and having my hands there is soothing.

One other thing - I am trying to determine how much meat and protein I should eat respective to my body mass - right now i am not weighing things, just going on what feels right - I stop eating when I feel full and have noticed my appetite has decreased. Don't feel like eating much in the evenings now!

I ususally drink my coffee with a little stevia. But sometimes I like to have some cream flavor, and I add a very large teaspoon of coconut milk. I think it has a nice, creamy taste even though it is different from dairy cream.

According to the can, 80 grams (or 1/3 cup) of coconut milk has 2 grams of carbs.

I use heavy whipping cream (_http://www.organicvalley.coop/products/cream/heavy-whipping-cream/) in my coffee with Stevia. The heavy cream has 6g of fat for one tablespoon, 0 carbs and 0 protein.
 
My weight is increasing again - up to 51 kg from the previous low of 48 kg during the initial low-carb period, having been stuck at 50 kg prior to that.

Nowadays I often have a breakfast of 400g of sausage (a small falukorv) - then a can of coconut milk a day - and more meat and often eggs at one or more meals. Garlic and onion are the only vegetables habitually eaten - apart from the 4% of potato flour in the sausages. As for other carby things - in small amounts - sometimes have plain, unsweetened cocoa with my coconut milk, and as of recently sometimes a bit of peanut butter.

Have recently begun taking quite a bit of daily vitamin C. And after a longer pause, did another DMSA cycle; more to follow, now that the body seems to detox better.

I for one think it's great. This is a great thread. I used to have very dry itchy skin, it has improved quite a bit. I plan to dig deeper into my candidad issues... thanx everyone!

I'm glad to hear it is helping you too Laura and everyone else. Diet is the biggest part of my new religion, beats guilt anyday! :)

Your granola might be accelerating your weight loss. As Taubes explains in "Why We Get Fat," there seem to be two ways that insulin works on people: in one way, it causes immediate storage of carbs as fat; in other people, it causes major burn off of energy. So if you are not eating meat for breakfast, eliminating grains and most carbs, you are really just burning your reserves off by triggering the insulin.

I eat meat every morning as well Laura, homemade paleo-sausage or bacon or ham as well as blinis with duck fat and 1 or 2 eggs. I just did another batch of pemmican and eat it in between meal. I eat half a cup of granola made with dehydrated nut and date paste with half a cup of berries that all. I eat 3 meals of meat every day and add fat in most of them usually bacon fat but I guess I need to eat bigger portion. I will cut the cereal and eat an extra sausage or other meat for a wild and see if it make a difference.

You might want to actually count your carbs - get a good carb counter so you can get the feel of how many carbs are in any given item. Date paste is almost pure sugar.

I was surprised to learn how many carbs are in some things that I thought were innocuous, like a bit of apple juice.
 
One other thing I have been noticed since consuming more meat and fat, is that I am sleeping a lot less, which I usually do as the Summer approaches, I just naturally wake up, but the difference is that contrary to all my previous experience I feel fully refreshed. This has been going on for months now, I'm really surprised.
I thought I'd post it in case anyone else is experiencing this.
 
I noticed that I feel better when I have 4 or 5 B.U. (48g - 60g of carbs per day). I just don't get hungry, so I end up eating breakfast and one more meal. This means that some days, if I have 6 B.U., it feels as if I'm eating more carbs than protein or fat. Well, I'm small and perhaps other small people might feel similarly.

I'm actually feeling more hungry now that I'm having less carbs. I might actually have 3 full meals today :)

Me too. But I can't really distinguish if it's the fat diet or darkened room for sleeping.

A note on dates, these have also been my carb indulgence and have had to cut back. I still crave those sweet streaks, but much less after I have turned up the fat intake.

I am basicaly only eating; Pork patties and chops, and organic bacon. Beef shoulder stews, and organic ground beef, the weekly fish, with sweet potatoes and wild rice. In different combinations, but all in all not very varied. The last few weeks I have been producing alot of muckus in nose and throat, It may be my pork provider which is so called freeland; grass fed when weather allows and when it gets very cold they are fodder fed inside (wheat and possibly GMO, the seller cannot tell), I can't afford meat stamped organic+freelander, so that will have to do for now.

I tested yesterday creme fraiche, which was not so good (my stomach complaint a bit). So I'm continuing to look for something better. And eggs seem fine with me, no complaints at all.

Most often it helps too to check the label of products or to use the table of Lutz book himself, to have an overview, if someone is interested.

And what I find funny I'm eating now since about three months chicken every single day and I'm still getting not sick of it. It's amazing that we are grown up with hundreds of different tastes and fat, salt, meat can conquer them all and still be satisfied, if nothing else the body ever wanted.

I tried to darken my room and bought an extra blind but there is still a long way to go until I'm able to make it dark. It is darker then before, but the sunlight still gets through very easily.

I do cope much better with less sleep though, as in, incomparably better, so in my case I'm putting it down to the diet, also possibly the cumulative effects of having been off evil foods for a while and taking various supplements.
 
If anybody had ever told me ten years ago that we would be eating high fat/protein diet, eliminating gluten and dairy, and having all kinds of disorders clearing up, I would not have believed it. What is SO fascinating is the fact that so many things just sort of clear up! Rashes, indigestion, breathing problems, aches, pains, palpitations, hormone imbalances, insomnia and so on and on.

Yes, everybody has to navigate a little bit their own system and situation, but overall, it's the same result across the board.

The guys here tried the cream and had very bad stomach reactions, so I guess that is out.

We had pork ribs for dinner and that seems to be one of the meats that has a lot of fat on it naturally. They are great done on the grill.
