Yeah, the outer texture can be a bit funky for the tongue. :) Also, I hope that you removed the skin!
 
Quinoa elbow macaroni, steamed kale and baby beets, and shrimp fried in virgin coconut oil with a little celtic sea salt. I prepare each ingredient separately. I put a little coconut oil in the boiling water to keep the quinoa elbows from sticking while I heat coconut oil in the cast iron skillet. When the oil is hot I turn off the heat and add the shrimp. They should be turned until the heat subsides. I then mix the quinoa elbows and the steamed greens in the skillet with the shrimp. This is a meal in a bowl that is very colorful with the mellow yellow elbows, the bright greens and a few thinly sliced red beets. It takes about fifteen minutes to prepare.

edit: just discovered the fine print says the quinoa elbows contain corn and quinoa... :umm:

I most definitely removed the skin...and a bit more underneath too. :D
 
Grilled chicken breast with a green salad. Desert was choice of yesterday dairy-free cheese cake or freshly made banana choco buckwheat muffin.
 
Tonight I made a stew with root veggies (carrots, white sweet potato, rutabaga and a type of sweet turnip) and beef. Added in a buckwheat roux to make it nice and thick. Came out decent. Next time I probably won't use the turnip for a stew though - even though it was a mild kind, it still overpowered the stew just a tad.
 
Last night I did chicken in a little sauce of brandy, I put apples and onions in the sauce also. Instead of rice I did quinoa, for the first time in my life! We love it. For desert: a yogurt. OK, I know yogurts are not good, but what can I take instead of it? :-[

You may like to consider creamed coconut block diluted with water to your preferred consistency.
 
Had a beef tenderlion rubbed with garlic & pepper with butternut squash on the side. It was yummy and very filling.

That sounds very delicious. Will have to try a version of this. No chili peppers for me. Hmmmn, I wonder how this would be in a filling for grape leaves?

The yogurt - all dairy - verboten. That's what this thread is for: meals that are gluten and DAIRY free. :headbash:

As for what you can have instead? Haven't we all been talking about fruit and shortbread and setting examples of what to eat instead of gluten and dairy containing foods??? :headbash: :headbash: :headbash:

Try fresh fruit in coconut milk. Quite satisfying, either chilled or heated, as a dessert. (If you want a thicker slurry, add arrowroot when heating the coconut milk. Pour over fresh fruit. Sprinkle with xylitol or d-ribose, or stevia. Chill if you want it cold.)
 
Last night I was extremely hungry for some reason, so made buckwheat pancakes and then fried an entire pack of organic bacon (8 thick slices) in a heaping of goose fat until they where nice and crispy. Made a rue/gravy out of the fat left in the pan after the heat had cooled down a little by adding buckwheat and smothered the pancakes and bacon in it :D
I was too full for desert! :lol:

If you want something more like ice cream (frozen yogurt) then I love to eat frozen berries (especially frozen blueberries!). Pouring some coconut milk on them is good too!
I'm also working on a dairy free ice cream (and other deserts) but am still getting through the disastrous faze of them being inedible :lol:

Bacon salad: with palms, lettuce, avocado and lentils! Yummy!! :) :) :)

Easy, just fried the bacon, chopped the veggies and previously cooked the lentils, seasoned with some pepper salt and olive oil and your good! I also put some apple vinegar, but just some drops.

Salmon and vegetable soup, thickened with buckwheat flakes, and flavoured with mint and extra virgin olive oil.
