What's for Dinner?

Roasted organic potatoes and Dalmatian bacon (panceta) with parsley & rosemary and a bit of home made virgin olive oil and orange juice mixture. Side dish; black "Orgula" olives, capers & wild garlic salad.

Tonight we had lamb shoulder with beef tallow, carrots, broccoli, onions, garlic and shallots cooked in the pressure cooker. I had never cooked with a pressure cooker before (we've been vegetarians half our lives and never really had an interest in one before), but I was inspired by this thread to try it. And it was good! I probably put too much water but the taste was incredible! My daughter asked for more meat and Tigersoap for more broccoli, which had actually never happened before!
 
Braised lamb tonight, cook with onion, garlic, thyme, cinnamon etc.., slowly cook in porto and dry figs. I will serve it with quinoa and steamed veggies. For desert, non-dairy raspberry cheese cake.
 
Supper tonight was poached salmon with garlic granules and veg soup powder sprinkled over plus gem heart lettuce, little sweet plum tomatoes and cucumber and free from pitta toasted with coconut oil spread over.

Yes, yeast in pitta but am having difficulty finding non yeast non gluten bread type things to eat. Any suggestions? Find buckwheat is stirring my post-bowel cancer gut up.

Read several of the above and got hungry ;D

Meanwhile, for dinner tonight we had pork ribs roasted in the oven with barbecue sauce; boiled little red potatoes, green peas, shortbread with mango-pineapple compote.
 
It's really a fun thread, cause to see what others had for dinner. :)
Actually I don't cook that often in the evening, however this topic motivated me.


For me tonight: (first soaked) lentils with fennel, turkey meat and butter.


With the soaking it takes about 4-5hrs, nonetheless very easy and simple.

Tea tonight was: Rollmop, quinoa, and a warm salad containing steamed leek, carrot and courgette, as well as radish, lettuce, beet and cucumber, topped with a raspberry mayonnaise.
 
Lunch today at 2pm was ground organic turkey sauteed in bacon lard with herbs; curry, turmeric, coriander. From the juice of meat and bacon grease, a gravy was made with buckwheat flour. Served with deep fried (in lard) potato fritters and steamed kale with ghee and bacon bits.
 
Tonight, it is chicken soup...made with a whole organic chicken, onion, bay leaf, basil, oregano, lemon juice, salt and peppercorns. This is the second time I've used cheese cloth to make a bag for the chicken, so that it can be removed and de-boned easily. Works great! :D
 
Soon it will be beef short ribs slow cooked all day in broth and a few veggies, and a greens saute.
 
For me it was cod fillet cooked in coconut oil with a chopped onion and salt and pepper. As the fish cooks, I break it up and let it go until is gets a little crispy - really good. I just recently 'discovered' cod, and now found out its a bottom feeder, so not sure how good it really is for me. I did notice that it almost tastes like a shell fish.
 
Well, this thread seems to be working it's magic. I usually have pretty boring dinners - buckwheat pancakes and fish or some other meat. Tonight I was motivated to do a bit more.

I put some beef and carrots in the pressure cooker. The beef falls right apart and is delicious. I also microwaved a sweet potato and had some ghee with it. For desert I made lemon vanilla quinoa cookies (a variation of Trevrizent's buckwhaet digestive biscuits). They came out wonderfully. And now I'm having some camomile tea with lemon and a little stevia. mmmmm.

Yeah, I love cod when it is cooked at a really low temperature - comes out really soft and tasty. Unfortunately, it seems it's not the greatest fish to be eating. Apparently it's higher in mercury too.
